Picadillo Cubano (Cuban Spiced Minced Beef)
Why this recipe works
- Layered savoury flavour: Browning the beef first builds depth before the onion, garlic, cumin, oregano and tomatoes form the sauce.
- Sweet-savoury balance: Raisins soften the acidity of the tomatoes while green olives add a briny counterpoint.
- Good for batch cooking: The picadillo reheats well and can be chilled or frozen separately from the rice.

Authenticity notes
- Cuban home-style dish: Picadillo is commonly cooked as a family-style minced beef dish, often served simply over white rice.
- Olives and raisins: The mix of briny olives and sweet raisins is a recognisable feature of many Cuban-style picadillo recipes.
- Traditional serving: White rice is the classic base, helping absorb the tomato-rich sauce.
Ingredient notes
- Season after the olives: Green olives bring their own saltiness, so taste once they are added before adjusting the final seasoning.
- Potato texture: Cooking the potato separately keeps the cubes tender but intact when folded into the sauce.
- Minced beef: Use minced beef that browns well rather than steams; cooking off excess liquid helps develop a richer base.
Common mistakes
- Letting the sauce catch: Keep the tomato mixture at a gentle simmer and stir more often as it thickens.
- Overcooking the potatoes: Stop boiling the potato once just tender so it does not break down when stirred into the picadillo.
- Adding salt too early: Because olives are salty, hold back final seasoning until the sauce has simmered and the flavours have combined.
Make-ahead tips
- Cook ahead: The picadillo can be made in advance and refrigerated once cooled, ready to reheat for a quick meal.
- Keep rice separate: Store the rice and picadillo in separate containers so the rice keeps its texture.
- Freeze the sauce: Freeze the cooked picadillo in an airtight container, then thaw and reheat until piping hot throughout.

Ingredients
Instructions
- Rinse the rice in a sieve until the water runs mostly clear. Tip into a saucepan with 400 ml water and 0.5 tsp of the fine sea salt, bring to the boil, then cover and cook on low for 12 minutes. Take off the heat and leave, covered, for 10 minutes.
- Meanwhile, peel the russet potato and cut into 1.5 cm cubes. Put in a saucepan, cover with cold water, add 0.5 tsp of the fine sea salt, then bring to the boil and simmer for 8 to 10 minutes until just tender. Drain and set aside.
- Finely chop the yellow onion and crush the garlic. Heat a large frying pan over medium-high heat, add the minced beef and cook for 6 to 8 minutes, breaking it up, until browned and any liquid has cooked off. Stir in the onion and cook for 4 minutes until softened.
- Add the garlic, ground cumin, dried oregano and black pepper and cook for 30 seconds until fragrant. Stir in the canned tomatoes, bay leaves, raisins and 0.5 tsp fine sea salt, then bring to a gentle simmer. Cook for 12 to 15 minutes, stirring occasionally, until the sauce is rich and slightly thickened.
- Stir the drained potatoes and green pitted olives into the pan and simmer for 3 to 5 minutes so everything is hot and coated in sauce. Taste and adjust with the remaining fine sea salt if needed, then remove the bay leaves. Serve the picadillo over the rice.
Recipe notes
Tips
- Keep the simmer gentle once the tomatoes go in, so the sauce reduces without scorching; stir more often as it thickens.
- For a softer, stew-like texture, simmer the tomato mixture 5 minutes longer before adding the potatoes so the sauce turns richer.
- If serving vulnerable groups, make sure the dish is reheated until piping hot throughout.
Substitutions
- Replace green pitted olives with black pitted olives for a milder, rounder olive flavour.
- Replace long-grain white rice with jasmine rice for a more fragrant base.
Storage
- Refrigerate up to 3 days
- Cool the picadillo quickly and refrigerate in an airtight container. Reheat in a saucepan over medium-low heat with a small splash of water, stirring, until piping hot; rice is best cooked fresh but can be chilled separately and reheated in the microwave until piping hot.
