Chinese Shrimp Fried Rice
Why this recipe works
- Fast cooking: Using cooked rice keeps the active wok time short, so the prawns, egg and vegetables can be stir-fried quickly.
- Clean savoury flavour: Soy sauce seasons the rice, white pepper adds warmth, and sesame oil gives a nutty finish once the wok is off the heat.
- Efficient wok method: Cooking the egg first, then the prawns and vegetables, keeps each element properly cooked before everything is tossed together.

Ingredient notes
- Use cooled rice: Cold, loosened rice fries more evenly and is less likely to clump in the wok.
- White pepper matters: White pepper gives the rice a gentle, earthy heat that feels more typical of Chinese-style fried rice than black pepper.
- Finish with sesame oil: Add sesame oil after the wok comes off the heat so its aroma stays fresh rather than cooking away.
Common mistakes
- Overcooking the prawns: Stir-fry the prawns only until they turn pink and opaque; they will continue warming through when returned to the rice.
- Crowding the wok: Too much food in the pan traps steam, making the rice softer instead of lightly fried.
- Using low heat: Fried rice needs a hot wok or large frying pan so the grains heat quickly and take on a lightly toasted flavour.
Texture tips
- Keep the rice dry: Break up clumps before cooking and avoid adding too much liquid seasoning at once.
- For more defined grains: Spread freshly cooked rice out to cool before frying if you do not have leftover rice ready.
Make-ahead tips
- Cook the rice ahead: The rice can be cooked in advance, cooled quickly and refrigerated until needed.
- Reheat thoroughly: Warm leftovers in a hot wok or large frying pan with a small splash of water until piping hot throughout.
- Best served fresh: The texture is at its best straight from the wok, when the rice is hot and the prawns are just cooked.

Ingredients
Instructions
- Separate any clumps of the cold cooked rice with your fingers so it is loose and ready to fry. Finely slice the garlic, dice the carrot small, and slice the spring onion (keep a little of the green part for finishing). Lightly beat the eggs in a bowl.
- Heat a wok over high heat and add 10 ml of the sunflower oil. Pour in the eggs and scramble for 30 to 60 seconds until just set, then tip out onto a plate. Wipe the wok if needed.
- Return the wok to high heat and add the remaining sunflower oil. Add the prawns and stir-fry for 1 to 2 minutes until they just turn pink, then add the garlic and carrot and stir-fry for 1 minute. Add the peas and cook for 1 minute until hot.
- Add the rice and stir-fry for 3 to 4 minutes, pressing and tossing so the grains heat through and start to look slightly glossy. Add the soy sauce and white pepper and stir-fry for 1 minute, scraping the bottom so nothing catches. Return the egg to the wok, add most of the spring onion, then toss for 30 seconds.
- Take off the heat and drizzle over the sesame oil, then toss well. Serve hot, scattered with the reserved spring onion greens.
Recipe notes
Tips
- Cold, cooked rice gives the best texture; if your rice is freshly cooked, spread it out to cool quickly before frying.
- Keep the wok hot and avoid overcrowding so the rice fries rather than steams.
- If serving anyone vulnerable, ensure the eggs are fully set and the prawns are cooked through and opaque.
Substitutions
- Replace Sunflower oil with Vegetable oil for similar high-heat stir-frying.
- Replace Sesame oil with Toasted sesame oil for a stronger, nuttier finish.
- Replace White pepper with Black pepper for a sharper pepper note.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in a sealed container. Reheat in a hot wok or large frying pan with a splash of water until piping hot throughout; do not reheat more than once.
