Empanada Gallega (Galician Savoury Tuna Pie)
Why this recipe works
- Slow-built filling: Gently cooking the onion and pepper before adding paprika, tomato and tuna gives the filling sweetness, savouriness and depth without needing many ingredients.
- Olive oil pastry: The olive oil dough is characteristic of this style of empanada, giving a tender bite rather than a flaky butter-pastry texture.
- Good warm or room temperature: The filling sets as it rests, so the pie slices neatly and works well for meals, packed lunches or sharing platters.

Authenticity notes
- Galician style: Empanada Gallega is typically baked as a large pie and cut into portions, rather than shaped as small individual turnovers.
- Olive oil in the dough: Using olive oil in both the filling and pastry keeps the flavour cohesive and gives the crust its distinctive tenderness.
- Flexible fillings: Tuna is a classic choice, but Galician empanadas are also commonly made with other seafood, meat or vegetable fillings.
Timing notes
- Cool the filling before assembling: Let the tuna filling cool until just warm so it does not soften the dough or make the edges difficult to seal.
- Rest the dough briefly: A short rest after kneading relaxes the dough, making it easier to roll thinly and evenly.
- Rest before slicing: Leave the baked empanada for about 10 minutes before cutting so the filling settles and the slices hold their shape.
Common mistakes
- Watery filling: Reduce the tomato mixture until thick and jammy before adding the tuna; excess moisture can make the base heavy.
- Filling too hot: Assembling with hot filling can weaken the pastry and make crimping difficult, so allow it to cool first.
- Pale pastry base: Roll the dough evenly and bake until the top is deeply golden so the base has enough time to cook through.
Make-ahead tips
- Make the filling in advance: The tuna filling can be cooked ahead and chilled, then brought back towards room temperature before assembling.
- Reheat for best texture: Warm slices on a baking tray at 180°C (355°F) until piping hot to help the pastry regain some crispness.
- Freeze baked portions: Cool completely, wrap well and freeze in portions; thaw before reheating for the most even result.

Instructions
- Warm the olive oil in a saucepan over a low to medium heat. Thinly slice the onion, add it with 1 tsp of the salt, and cook gently for 15 to 20 minutes until very soft and sweet, stirring now and then.
- Slice the red peppers into thin strips and stir them into the onions. Cook for 10 to 12 minutes until the peppers are tender, then stir in the sweet paprika for 30 seconds.
- Add the tomato passata and simmer for 8 to 10 minutes until thick and jammy, then take off the heat. Flake in the tuna and mix well; taste and season with the remaining 1 tsp salt if needed, then leave to cool until just warm.
- Heat the oven to 200°C (390°F). In a mixing bowl, whisk the egg with the water, then whisk in 60 ml of the olive oil from the filling pan (or measure fresh) until combined.
- Add the plain flour and mix to a shaggy dough, then knead for 3 to 4 minutes until smooth and supple. Cover and rest for 15 minutes so it rolls easily.
- Divide the dough into two pieces, one slightly larger than the other. Roll the larger piece into a rectangle about 3 mm thick and set it on a baking tray, letting it overhang slightly.
- Spread the cooled filling evenly over the base, leaving a 2 cm border. Roll out the remaining dough to the same thickness, lay it over the top, then press and crimp the edges to seal; cut a small steam hole in the centre.
- Brush the top lightly with a little olive oil. Bake for 30 to 35 minutes until deep golden and crisp at the edges.
- Rest for 10 minutes before slicing so the filling sets. Serve warm or at room temperature.
Recipe notes
Tips
- Let the filling cool until just warm before assembling; a hot filling can soften the pastry and make it harder to seal.
- Roll the dough evenly to about 3 mm so the base cooks through at the same time the top turns golden.
- If serving at room temperature, slice with a serrated knife for cleaner edges.
Substitutions
- Replace Yellow onion with Sweet onion for a milder, sweeter filling.
- Replace Sweet paprika with Smoked paprika for a deeper, smoky flavour.
- Replace Tomato passata with Canned crushed tomatoes, simmering a few minutes longer to reduce to the same thickness.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat slices on a baking tray at 180°C (355°F) for 10 to 15 minutes until piping hot, or freeze well wrapped for up to 2 months and reheat from thawed.
