Soufflé au Fromage (Gruyère Cheese Soufflé)

A French cheese soufflé is prized for the way a simple savoury base turns into something light, tall and delicately set. Here, a thick béchamel gives the structure, while Gruyère brings a nutty, melted richness sharpened with Dijon mustard and a little nutmeg. Whipped egg whites provide the lift, so the finished soufflé should rise high in the oven, with a golden top, softly set edges and a creamy centre. It is a dish for serving straight away, before the puff settles, and works well as an elegant starter or a light main with a crisp green salad.

Why this recipe works

  • Classic soufflé structure: A thick béchamel gives the soufflé enough body to hold the cheese, while whipped egg whites provide the lift.
  • Balanced savoury depth: Gruyère brings nutty richness, with Dijon mustard, white pepper and nutmeg adding gentle sharpness and warmth.
  • Airy with a creamy centre: Baking until just set at the edges keeps the soufflé light and puffed while leaving the centre softly creamy.

Timing notes

  • Serve without delay: A soufflé begins to deflate soon after leaving the oven, so have the table ready before it finishes baking.
  • Best eaten fresh: Leftovers can be reheated, but the soufflé will not regain its original height or delicate texture.

Texture tips

  • Keep the lift: Fold the egg whites in gently and stop once no large streaks remain; overmixing knocks out the air needed for a good rise.
  • For a more set centre: Bake a little longer if serving anyone who needs fully cooked eggs, checking that the centre is no longer soft.

Common mistakes

  • Thin sauce base: The béchamel should be very thick and glossy before the yolks and cheese are added; a loose base can collapse more easily.
  • Opening the oven too early: Avoid opening the oven during baking, as a sudden temperature drop can interrupt the rise.

Ingredient notes

  • Choosing the cheese: Gruyère is traditional for its nutty flavour and reliable melting quality, but a sharper hard cheese will give a saltier result.
  • Egg whites need a clean bowl: Any grease or yolk in the bowl can stop the whites from whipping properly, which affects the soufflé’s height.

  1. Heat the oven to 200°C (390°F) and place a baking dish in the middle. Generously butter a 1 litre soufflé dish with some of the unsalted butter, then set it in the fridge to firm up while you make the base.
  2. Melt the remaining unsalted butter in a saucepan over medium heat. Add the plain flour and whisk for 1 to 2 minutes until it smells biscuity but has not coloured.
  3. Gradually whisk in the whole milk until smooth, then cook, whisking, for 3 to 5 minutes until very thick and glossy. Take off the heat and season with fine sea salt, white pepper and ground nutmeg, then whisk in the Dijon mustard.
  4. Grate the Gruyère cheese. Separate the eggs, putting the yolks into the warm sauce and the whites into a clean mixing bowl, then whisk the yolks in one at a time until smooth.
  5. Stir most of the Gruyère into the base, reserving a small handful for the top. Let the mixture cool for 3 to 4 minutes so it is warm rather than hot.
  6. Whisk the egg whites with a hand mixer to stiff peaks. Fold one third into the cheese base to loosen it, then gently fold in the rest until no large streaks remain.
  7. Spoon the mixture into the prepared soufflé dish and level the top, then sprinkle over the reserved Gruyère. Bake for 18 to 22 minutes until well risen, lightly golden, and the centre still has a slight wobble; do not open the oven during baking.
  8. Serve immediately while puffed. The soufflé should be airy and set at the edges, with a creamy centre.

Recipe notes

Tips

  • Use a completely clean, grease-free bowl and whisk for the egg whites, or they will not whip properly.
  • For the best rise, make sure the béchamel is very thick before adding the yolks and cheese, and fold the whites in gently to keep as much air as possible.
  • Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the soufflé is baked until the centre is fully set.

Substitutions

  • Replace Gruyère cheese with parmesan for a sharper, saltier flavour.
  • Replace Dijon mustard with whole-grain mustard for a milder heat and a slightly coarser texture.

Storage

  • Refrigerate up to 1 days
  • Soufflé is best served straight from the oven. If you have leftovers, cool, cover and refrigerate for up to 1 day, then reheat in a 180°C (355°F) oven for 10 to 12 minutes until piping hot; it will not re-inflate fully.
