Mushroom and Chestnut Pâté with Thyme

This vegetarian pâté borrows the chilled, spreadable format of a French pâté without trying to imitate a meat filling. Browned mushrooms supply the savoury flavour, cooked chestnuts give a gentle sweetness and cream cheese holds everything together. A little thyme and lemon keep the mixture lively once chilled. It can be made ahead and served directly from small ramekins, which is useful when oven space is reserved for the main meal. Leave a few fine mushroom flecks in the mixture for an appealing texture on bread.

Why this recipe works

  • A savoury base with gentle sweetness: Chestnuts soften the earthy mushroom flavour. Lemon adds a small lift without making the spread sharply sour.
  • A spread that holds together: Full-fat cream cheese binds the cooked ingredients as the pâté chills, giving it enough body to sit on a slice of bread.
  • Ready before the guests arrive: The chilling stage does the final setting. There is no last-minute baking or sauce to finish before serving.

Ingredient notes

  • Use unsweetened cooked chestnuts: Choose ready-to-eat roasted chestnuts. Candied chestnuts are too sweet, while raw chestnuts would need a separate cooking and peeling process.
  • Choose plain full-fat cream cheese: The firmer texture helps the pâté set. A whipped or low-fat spread can leave the mixture softer and less stable.
  • Look for firm mushrooms: Avoid mushrooms with wet, slippery surfaces. Fresh cultivated mushrooms give a cleaner flavour and are easier to brown.

Texture tips

  • Pulse rather than purée continuously: Short pulses leave small mushroom flecks. Stop as soon as the mixture spreads evenly instead of processing it into a completely smooth paste.
  • Judge the texture after chilling: The pâté is softer while the ingredients are warm. Give it the full refrigerator time before deciding whether it has set.

Make-ahead tips

  • Make it the previous day: Prepare and chill the pâté ahead, leaving the bread unsliced until serving so its cut surfaces stay fresh.
  • Keep it chilled when travelling: Transport covered ramekins in an insulated bag with ice packs and refrigerate on arrival. Keep the bread packed separately.

Serving ideas

  • Serve from a small ramekin: A small dish makes a modest starter portion look generous and lets you keep the reserve chilled.
  • Use the reserved thyme sparingly: Scatter only the reserved leaves over the surface. The main thyme flavour is already in the cooked mixture.
  • Cut bread into manageable slices: Thin slices let guests spread the pâté without needing a large serving. Keep a dedicated knife beside the ramekin.

  1. Wipe the mushrooms clean and chop into roughly 1 cm pieces, then peel and finely chop the shallots. Strip the leaves from three thyme sprigs and set the fourth sprig aside for serving, then break up the chestnuts and squeeze the lemon.
  2. Melt the butter in a 30 cm frying pan over a medium heat. Add the shallots and cook for 5 minutes, stirring occasionally, until softened without browning.
  3. Add the mushrooms, thyme leaves, salt and pepper and cook over a medium-high heat for 12–15 minutes, stirring regularly, until the mushrooms are browned and the pan looks dry. Reduce the heat if the shallots begin to catch.
  4. Spread the cooked mixture in a shallow dish and leave for 15 minutes until warm rather than hot. Do not leave it standing for a long cooling period.
  5. Put the chestnuts, cream cheese and lemon juice in a food processor with the warm mushroom mixture. Pulse, scraping down the sides, until spreadable with small mushroom flecks, then divide between two clean 300 ml ramekins and smooth the tops.
  6. Cover and refrigerate the ramekins for at least 2 hours until chilled and firm enough to spread. The stated total time includes this chilling period.
  7. Slice the bread and serve alongside one ramekin, scattering the leaves from the reserved thyme sprig over the pâté. Keep the second ramekin refrigerated until needed and provide a clean spreading knife.

Recipe notes

Tips

  • A 30 cm pan gives the mushrooms room to lose water. If using a smaller pan, cook the mushrooms in two batches and allow extra cooking time before combining them with the shallots.
  • The finished pâté should spread without running. If it looks very loose before chilling, the mushroom mixture probably retained too much liquid, so make sure the pan is dry at the end of cooking.

Substitutions

  • Replace the chestnuts with the same weight of ready-cooked, well-drained cannellini beans for a softer, less nutty spread. Keep the chilling step and the same refrigerated storage limit.
  • Replace the thyme with 1 teaspoon finely chopped fresh rosemary, adding it to the mushrooms during cooking.

Storage

  • Refrigerate up to 3 days
  • Keep covered in the fridge and use within 3 days of making. Serve small portions and refrigerate within 2 hours of bringing them out. Keep untouched pâté separate from any portion that guests have eaten from, and discard food left out beyond 2 hours. Freezing is not recommended because the cream cheese can become grainy.
