Francesinha (Porto Sandwich with Beer and Tomato Sauce)

Porto’s francesinha is a hearty knife-and-fork sandwich, known for its layers of meat, blanket of melted cheese and hot beer-based sauce. Thick white bread holds steak, pork sausage and cured ham, while a tomato, lager, beef stock and piri-piri sauce gives the dish its signature savoury depth, gentle acidity and chilli heat. Served immediately, with the cheese molten and the sauce spooned generously over the top, it sits somewhere between a toasted sandwich and a full dinner. Rich, filling and deliberately messy, it is best made when you want a bold Portuguese-style meal rather than a light snack.

Why this recipe works

  • Deep savoury sauce: Tomatoes, lager, beef stock and piri-piri create a glossy sauce with richness, acidity and gentle heat.
  • Crisp bread, molten cheese: Lightly toasting the bread before baking helps it hold its shape beneath the meat, cheese and hot sauce.
  • Bold and satisfying: Steak, sausage, ham and melted cheese make this a substantial knife-and-fork sandwich suited to a hearty dinner.

Get the most out of this recipe

Adjust the heat

  • For less heat: Reduce the piri-piri sauce and let the tomato, beer and stock carry the flavour of the sauce.
  • For a hotter sauce: Add extra piri-piri gradually near the end of simmering, tasting as you go so the heat stays balanced.

Authenticity notes

  • Porto style: Francesinha is closely associated with Porto and is defined by its layered meats, melted cheese coating and hot beer-based sauce.
  • Served sauced, not dipped: The sauce is spooned generously over the finished sandwich just before serving, keeping the cheese molten and the bread partly crisp.

Make-ahead tips

  • Keep components separate: Store the sauce and cooked meats away from the bread so the sandwich does not become soggy before baking.
  • Assemble just before baking: Toast the bread, layer the fillings, add the cheese and bake only when ready to serve.
  • Reheat gently: Warm the sauce over low heat until piping hot, then rewarm the meats separately before assembling.

Texture tips

  • Protect the bread: Toast the bread lightly before building the sandwich so it can support the fillings and hot sauce.
  • Rest the steak: Let the steak rest before slicing so the meat stays juicier inside the sandwich.

Instructions

  1. Heat the oven to 220°C (430°F). Finely chop the onion and garlic, and roughly chop the tomatoes.
  2. Melt the butter in a saucepan over medium heat, then cook the onion with a pinch of salt until soft and lightly golden, about 8 minutes. Add the garlic and cook for 1 minute until fragrant.
  3. Add the tomatoes and cook for 6 to 8 minutes until they break down and look jammy. Pour in the lager and simmer for 5 minutes to cook off the raw alcohol.
  4. Add the beef stock, vinegar and piri piri sauce, then simmer gently for 15 to 20 minutes until glossy and slightly thickened. Blend until smooth if you like, then keep warm on a very low heat.
  5. Meanwhile, cook the sausages in a frying pan over medium heat, turning, until browned and cooked through, 10 to 12 minutes. Transfer to a board and slice lengthways.
  6. Season the steak lightly, then sear in the same pan over medium-high heat for 2 to 3 minutes per side for medium-rare, or to your liking. Rest for 5 minutes, then slice thinly.
  7. Toast the bread lightly so it holds its shape. Build two sandwiches: bread, ham, steak, sausage, then top with bread.
  8. Place the sandwiches in a baking dish and cover the tops and sides with the cheddar cheese. Bake for 8 to 10 minutes until the cheese is fully melted and bubbling at the edges.
  9. Warm the sauce if needed, then spoon it generously over each sandwich just before serving. Serve immediately while the cheese is molten and the sauce is hot.

Recipe notes

Tips

  • Keep the sauce at a gentle simmer rather than a rapid boil so it stays glossy and does not reduce too far.
  • For a neater build, toast the bread only lightly at first, then let the oven finish the toasting as the cheese melts.
  • If serving anyone who is pregnant, elderly, or immunocompromised, cook the steak to well done and ensure the sauce is piping hot.

Substitutions

  • Replace Cheddar cheese with Mozzarella for a milder, stretchier topping.
  • Replace White wine vinegar with Sherry vinegar for a rounder, slightly sweeter acidity.
  • Replace Lager beer with Ale beer for a deeper, maltier sauce.

Storage

  • Refrigerate up to 2 days
  • Store the sauce and cooked meats separately from the bread for best texture. Reheat the sauce in a saucepan over low heat until piping hot, and rewarm the meats in a frying pan; assemble and bake with cheese just before serving.
