Bacalhau no Forno (Baked Salt Cod with Potatoes and Olives)
Why this recipe works
- Properly soaked cod: Soaking the salt cod before cooking softens the texture and controls the saltiness, which is essential for a balanced finished dish.
- Layered savoury flavour: Potatoes, onions, garlic, bay leaves, olives and olive oil bake together so the cooking juices become deeply aromatic.
- Hearty but simple: The combination of flaky cod, tender potatoes and rich olive oil makes this a satisfying main course without needing a complicated sauce.

Timing notes
- Plan for soaking: The cod needs a full soak in cold water before cooking, with several water changes, so start the recipe a day ahead.
- Most time is hands-off: Active preparation is relatively short; the longer total time mainly comes from desalting the cod and baking the assembled dish.
- Serve warm: This dish is best served warm, while the potatoes can absorb the olive oil-rich cooking juices.
Ingredient notes
- Choose salt cod carefully: Salt cod varies in thickness and salinity, so taste a small flake after soaking before adding any extra salt.
- Use good olive oil: Extra virgin olive oil is central to the flavour here, carrying the garlic, bay and onion through the potatoes and fish.
- New potatoes hold their shape: Waxy new potatoes are well suited to layering because they stay intact after boiling and baking.
Texture tips
- Keep the potatoes just tender: Boil the potatoes only until they are just cooked so they finish in the oven without collapsing.
- Cover first, then uncover: Baking under foil helps the onions soften and the cod stay moist before the final uncovered bake concentrates the juices.
Make-ahead tips
- Soak ahead: The cod can be soaked in advance and kept chilled until you are ready to assemble the dish.
- Reheat gently: Reheat leftovers covered in a 180°C (355°F) oven until piping hot, adding a little water if the potatoes look dry.
- Best freshly baked: The dish keeps well for a short time, but the cod and potatoes have the best texture on the day they are baked.

Ingredients
Instructions
- Rinse the salted cod under cold running water, then place it in a bowl and cover with plenty of cold water. Soak in the fridge for 24 hours, changing the water 3 to 4 times. Drain well.
- Heat the oven to 190°C (375°F). Scrub the new potatoes and slice them into 5 mm rounds. Put the eggs in a saucepan, cover with cold water, bring to the boil, then simmer for 10 minutes; cool under cold water and peel.
- Bring a large pot of water to the boil and add the potatoes with the fine sea salt. Simmer for 8 to 10 minutes until just tender but not falling apart, then drain. Spread the potatoes out briefly so the steam can escape.
- Slice the onion thinly and slice the garlic. In a baking dish, layer half the potatoes, then half the onion and garlic; tuck in 1 bay leaf and scatter over half the olives. Lay the cod on top, then cover with the remaining potatoes, onion, garlic, bay leaf and olives.
- Pour the extra virgin olive oil evenly over the top and season with black pepper. Cover the dish tightly with foil and bake for 30 minutes. Uncover and bake for a further 20 to 25 minutes, until the onions are soft and the cod flakes easily.
- Slice the eggs and scatter them over the hot dish. Chop the parsley and sprinkle it on top, then spoon over the cooking juices before serving warm. Taste and add a little more fine sea salt only if needed.
Recipe notes
Tips
- For the best texture, keep the potatoes slightly undercooked before baking so they finish tender in the oven without breaking up.
- If serving children or anyone sensitive to salt, soak the cod for the full time and taste a small flake after soaking before you start cooking.
- Eggs should be cooked until the yolks are set; if you are pregnant, elderly, or immunocompromised, use eggs stamped with the British Lion mark or an equivalent safety standard.
Substitutions
- Replace Fresh parsley with Fresh coriander for a different herbal finish.
- Replace Black pitted olives with Green pitted olives for a fruitier, less intense olive flavour.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate in a sealed container with the cooking juices. Reheat in a 180°C (355°F) oven, covered, for 15 to 20 minutes until piping hot; add a splash of water if it looks dry.
