Polvo à Lagareiro (Roasted Octopus with Potatoes and Garlic)
Why this recipe works
- Tender before roasting: Simmering the octopus before it goes into the oven gives it time to become tender without drying out.
- Crisp edges, soft centre: Roasting after simmering creates lightly crisp tentacle edges while keeping the thicker pieces moist.
- Garlic-infused oil: The potatoes, garlic and octopus roast together in olive oil, so the tray juices become the main sauce for serving.

Timing notes
- Most of the time is hands-off: The recipe takes time because the octopus needs a slow simmer before roasting, but the active preparation is relatively short.
- Rest before serving: A brief rest after roasting lets the garlicky oil settle into the potatoes and octopus before plating.
Texture tips
- Keep the simmer gentle: A steady, gentle simmer helps the octopus soften evenly; a hard boil can tighten the flesh.
- Dry the potatoes well: Drain the potatoes thoroughly before crushing and roasting so they take on colour rather than steaming in the tray.
Ingredient notes
- Use good olive oil: Extra virgin olive oil is central to the dish, not just a cooking fat, so choose one with a clean, rounded flavour.
- Whole octopus works best: A whole octopus gives a mix of thick tentacles and smaller pieces, which roast with varied texture and presentation.
Serving ideas
- Keep sides simple: Serve with a crisp green salad or bitter greens to balance the richness of the olive oil.
- Wine pairing: A chilled Portuguese white such as Vinho Verde or a dry coastal-style white works well with the garlic and seafood.
- Finish with parsley: Fresh parsley adds colour and a clean herbal lift just before serving.

Ingredients
Instructions
- Put the octopus in a large pot and cover with cold water. Add the onion and bay leaves, bring to a gentle simmer, then cook for 45 to 60 minutes until a knife slips easily into the thickest part of a tentacle. Lift the octopus out and leave it to cool until you can handle it.
- Heat the oven to 220°C (430°F). While the octopus cooks, boil the potatoes in well-salted water for 18 to 22 minutes until just tender, then drain well. Tip them into a roasting pan and lightly press each one to crack it open.
- Cut the octopus into large tentacles and chunks, then add to the roasting pan. Add the garlic cloves and drizzle over the extra virgin olive oil. Season with sweet paprika and black pepper, then toss gently to coat.
- Roast for 25 to 30 minutes, turning once, until the potatoes are golden and the octopus edges are lightly crisp. If the pan looks dry, spoon the oil over the octopus and potatoes halfway through. Rest for 5 minutes so the flavours settle.
- Finely chop the parsley. Scatter it over the tray, then spoon the garlicky oil over each portion. Serve straight from the roasting pan with plenty of the oil and any roasted garlic.
Recipe notes
Tips
- Keep the octopus at a gentle simmer rather than a rolling boil so it stays tender.
- Drain the potatoes thoroughly before roasting so they crisp and soak up the olive oil instead of steaming.
- If serving anyone who is pregnant, elderly, or immunocompromised, ensure the octopus is cooked until fully tender and piping hot throughout.
Substitutions
- Replace Yukon Gold potato with new potatoes for a firmer, waxier texture.
- Replace fresh parsley with fresh coriander for a different herbal finish.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat in a 200°C (390°F) oven for 10 to 15 minutes until piping hot, spooning the oil over to keep it moist.
