Piri-Piri Veggie Bowl
Why this recipe works
- Layered flavour: Roasted sweet potato and pepper add natural sweetness, while garlic, smoked paprika and cayenne give the chickpeas a smoky piri-piri-style depth.
- Bright finish: Lemon juice and zest cut through the warmth of the spices and lift the roasted vegetables at the end.
- Good for meal prep: The rice, vegetables and chickpeas hold well in the fridge, with the fresh herbs and citrus best added after reheating.

Adjust the heat
- For less heat: Use less cayenne and lean on sweet or smoked paprika for warmth without as much chilli bite.
- For more heat: Add extra cayenne gradually once the chickpeas are hot, tasting before serving so the heat stays balanced.
- Keep it rounded: Finish with lemon juice to stop the spice from tasting flat and to bring out the smoky paprika.
Ingredient notes
- Paprika choice: Smoked paprika gives the chickpeas their deeper, savoury character; sweet paprika makes the bowl softer and less smoky.
- Cut for even roasting: Keep the sweet potato pieces bite-sized and the pepper strips chunky so they roast in a similar time.
- Use fresh herbs at the end: Fresh coriander is added after cooking so it stays bright rather than wilting into the hot vegetables.
Make-ahead tips
- Pack for lunches: Cook the rice, roasted vegetables and chickpeas ahead, then portion into containers once cooled.
- Reheat gently: Warm with a splash of water until piping hot, then add the lemon and coriander after reheating for the freshest flavour.
- Freezer option: Freeze the cooked rice, vegetables and chickpeas together, but keep the citrus and herbs for serving.
Serving ideas
- Add crunch: Finish with toasted seeds or nuts if you want more texture against the soft rice and roasted vegetables.
- Add creaminess: A spoonful of yoghurt-style sauce or tahini dressing works well if you prefer a softer, richer bowl.
- Make it more substantial: Serve with a crisp green salad or simple slaw to add freshness alongside the warm spices.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Rinse the brown rice well, then cook it in a saucepan of lightly salted boiling water for 25 to 30 minutes until tender. Drain well and cover to keep warm.
- Peel the sweet potato and cut into bite-size chunks. Deseed the red pepper and cut into chunky strips. Tip both onto a baking tray, toss with 2 tbsp olive oil, half the fine sea salt and a good pinch of black pepper.
- Roast for 20 to 25 minutes, turning once, until the sweet potato is tender and the peppers are lightly charred at the edges. If the tray looks dry, drizzle over a little more olive oil. Keep the vegetables on the tray while you finish the chickpeas.
- Drain and rinse the canned chickpeas. Finely grate or crush the garlic. Warm 1 tbsp olive oil in a saucepan over a medium heat, add the garlic and cook for 30 seconds until fragrant.
- Stir in the smoked paprika and cayenne pepper, then add the chickpeas with the remaining fine sea salt and black pepper. Cook for 4 to 6 minutes, stirring, until hot and well coated in the spices. Take off the heat.
- Finely chop the fresh coriander. Zest the lemon, then cut it in half and squeeze the juice. Toss the roasted vegetables with half the lemon juice and half the coriander.
- Divide the brown rice between two bowls. Spoon over the roasted vegetables and top with the piri-piri chickpeas. Finish with the remaining coriander, lemon zest, and the remaining lemon juice to taste.
Recipe notes
Tips
- For the best texture, spread the sweet potato and red pepper out in a single layer so they roast rather than steam.
- If you are sensitive to heat, start with half the cayenne pepper and add more at the end once you have tasted the chickpeas.
- If serving to vulnerable groups, make sure the chickpeas are heated until piping hot throughout.
Substitutions
- Replace smoked paprika with sweet paprika for a milder, less smoky flavour.
- Replace fresh coriander with fresh parsley for a different herbal finish.
- Replace lemon with lime for a sharper citrus note.
Storage
- Refrigerate up to 3 days
- Cool completely, then store the rice, vegetables and chickpeas together in an airtight container. Reheat in the microwave or in a saucepan with a splash of water until piping hot; add the lemon and fresh coriander after reheating for the brightest flavour.
