Tarte au Riz (Belgian Rice Pudding Tart)
Why this recipe works
- Creamy filling: Short-grain rice releases starch as it simmers, giving the filling its soft, pudding-like body.
- Pastry and custard contrast: The crisp-edged shortcrust balances the gentle, creamy rice filling.
- Good for preparing ahead: The tart needs time to cool and firm up, so it suits baking in advance before slicing.

Timing notes
- Cool fully before slicing: The filling firms as it cools, giving cleaner slices and a more custardy set.
- Serve cool or at room temperature: The tart is best once settled rather than hot from the oven; serve it slightly chilled or let it stand briefly before serving.
Ingredient notes
- Use short-grain rice: Short-grain rice gives the filling its creamy consistency; long-grain rice will stay more separate and less pudding-like.
- Whole milk gives body: Whole milk helps create a richer, smoother rice pudding base before the eggs are added.
- Vanilla options: Vanilla extract works well, while vanilla bean paste gives a stronger vanilla flavour and visible specks.
Common mistakes
- Letting the milk catch: Keep the rice pudding on a gentle heat and stir regularly so the milk does not scorch on the base of the pan.
- Adding eggs while too hot: Let the rice pudding cool until warm before whisking in the eggs, otherwise they can scramble.
- Baking until completely firm: Remove the tart when the centre still has a slight wobble; it will continue to set as it cools.
Make-ahead tips
- Bake ahead: The tart can be baked in advance, cooled completely, then covered and refrigerated until needed.
- No reheating needed: Serve chilled or let slices come back towards room temperature; reheating can soften the pastry and loosen the filling.
- Freeze in slices: Freeze well-wrapped slices, then defrost overnight in the fridge before serving.

Instructions
- Make the pastry: put the plain flour, caster sugar and fine sea salt in a bowl. Rub in the cold unsalted butter until it looks like fine breadcrumbs, then mix in 1 egg to form a dough; add a tiny splash of cold water only if needed. Shape into a disc and chill for 20 minutes.
- Meanwhile, make the rice pudding: bring the whole milk just to a gentle simmer in a saucepan. Stir in the short-grain rice and cook on low, stirring often, for 30 to 35 minutes until the rice is tender and the mixture is thick and creamy. Stir in the caster sugar, vanilla extract, unsalted butter and a pinch of fine sea salt, then take off the heat and cool for 10 minutes.
- Heat the oven to 180°C (355°F). Roll out the chilled pastry on a lightly floured surface and line a 23 cm tart tin or cake tin, pressing it neatly into the corners. Trim the edge and chill the lined tin for 10 minutes while the oven heats.
- Whisk the remaining 2 eggs in a bowl, then whisk them into the warm (not hot) rice pudding until fully combined. Spoon the filling into the pastry case and smooth the top. Bake for 35 to 40 minutes until the centre is just set with a slight wobble and the pastry is golden.
- Cool the tart in the tin for 30 minutes, then remove from the tin and cool completely before slicing so the filling firms up. Serve at room temperature or slightly chilled. If you like, dust with a little extra caster sugar just before serving.
Recipe notes
Tips
- Keep the rice pudding at a gentle simmer and stir regularly so the milk does not catch on the base of the pan.
- Let the rice mixture cool briefly before adding the eggs so they do not scramble; it should feel warm rather than hot.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs that are pasteurised where available.
Substitutions
- Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
- Replace Plain flour with gluten-free plain flour blend for a gluten-free pastry (the texture will be slightly more crumbly).
Storage
- Refrigerate up to 3 days
- Cool completely, then cover and refrigerate. Freeze slices well wrapped for up to 2 months; defrost overnight in the fridge and serve chilled or bring to room temperature.
