Fava (Yellow Split Pea Purée)

In Greek cooking, fava is a silky purée made from yellow split peas rather than fresh broad beans. The peas are simmered gently with onion, bay and olive oil until they collapse, then blended into a smooth, spoonable dip with a mellow sweetness and savoury depth. A finishing layer of extra virgin olive oil, lemon juice, red onion and capers gives the purée its recognisable lift: creamy underneath, sharp and briny on top. Served warm or at room temperature, it works well as a vegan starter, part of a mezze spread, or a simple side with bread and crisp vegetables.

Why this recipe works

  • Creamy without dairy: Yellow split peas break down naturally as they simmer, creating a smooth, rich purée once blended.
  • Bright finish: Lemon juice, capers and red onion cut through the olive oil and mellow peas, keeping the dish fresh rather than heavy.
  • Useful for preparing ahead: The purée stores well and can be loosened with a little water when reheated, with the fresh toppings added just before serving.

Ingredient notes

  • Use yellow split peas: Despite the name, Greek fava is made with yellow split peas rather than fresh broad beans. They give the purée its pale colour and naturally creamy texture.
  • Adjust the lemon at the end: Add the lemon after blending so the flavour stays clean and bright. Taste before serving and sharpen with a little more if needed.
  • Balance the salty topping: Capers add a briny hit, so season the purée carefully before adding them.

Texture tips

  • Blend while hot: Blending the peas while they are still hot helps create the smoothest consistency.
  • Loosen gradually: If the purée is too thick, add a splash of water and blend again until it is soft and spoonable.
  • Cook until fully collapsed: The peas should be very tender before blending; undercooked split peas can leave the purée coarse.

Make-ahead tips

  • Make the purée in advance: Cook and blend the fava ahead, then cool and refrigerate in a sealed container.
  • Reheat gently: Warm it in a saucepan with a splash of water, stirring until smooth and piping hot.
  • Add toppings last: For the best flavour and texture, finish with lemon, olive oil, red onion and capers just before serving.

Serving ideas

  • Serve with bread or vegetables: Offer it with warm pita, flatbread or crisp raw vegetables as a simple starter or dip.
  • Finish generously: A final drizzle of extra virgin olive oil gives the surface a glossy finish and rounds out the lemon and capers.

  1. Rinse the yellow split peas under cold water until the water runs mostly clear. Peel and roughly chop the yellow onion. Thinly slice the red onion and set it aside for serving.
  2. Put the split peas, yellow onion, bay leaves, water, 2 tbsp of the extra virgin olive oil, fine sea salt and black pepper into a saucepan. Bring to the boil, then reduce to a gentle simmer and skim off any foam. Cook for 35 to 40 minutes, stirring occasionally, until the peas are collapsing and the mixture is thick.
  3. Remove and discard the bay leaves. Blend the peas until very smooth, adding a splash of water if needed to loosen to a creamy purée. Taste and adjust with a little more fine sea salt if needed.
  4. Spoon the fava into a shallow bowl and smooth the top. Squeeze over the lemon juice, then drizzle with the remaining extra virgin olive oil. Top with the sliced red onion and capers, and serve warm or at room temperature.

Recipe notes

Tips

  • Keep the simmer gentle and stir from the bottom towards the end so the peas do not catch as they thicken.
  • For the smoothest texture, blend while the mixture is still hot, then let it stand 5 minutes to settle before serving.
  • If serving to vulnerable groups, ensure the purée is reheated until piping hot if it has been cooled and stored.

Substitutions

  • Replace lemon with lime for a slightly sharper, more aromatic finish.
  • Replace capers with chopped dill gherkin pickles for a similar salty tang.

Storage

  • Refrigerate up to 4 days
  • Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of water, stirring until smooth and piping hot; add the lemon, capers, red onion and olive oil after reheating. Freeze in an airtight container for up to 2 months and defrost overnight in the fridge before reheating.
