Chicken Tikka Masala
Why this recipe works
- Layered spice base: Ginger, garlic, garam masala, cumin, coriander and Kashmiri chilli build warmth and fragrance without relying on excessive heat.
- Charred tikka flavour: Grilling the marinated chicken before it goes into the sauce gives the dish its smoky, lightly charred character.
- Smooth, rich sauce: Double cream is added at the end, keeping the tomato sauce rounded, glossy and gently spiced.

Adjust the heat
- For a milder curry: Reduce the Kashmiri chilli and finish with a little extra cream to soften the spice.
- For more heat: Increase the chilli gradually or add a hotter ground chilli alongside the Kashmiri chilli.
- Keep the heat rounded: Let the tomato sauce simmer properly before adding the cream; this helps the spices taste integrated rather than sharp.
Timing notes
- Marinate for flavour: The short yoghurt marinade seasons the chicken and helps the spices cling before grilling.
- Serve after the final simmer: Once the cream has been stirred in, warm the sauce gently and serve while it is smooth and glossy.
- Plan for hands-off time: Most of the total time comes from marinating and simmering, with the active cooking kept relatively manageable.
Ingredient notes
- Use chicken thighs for tenderness: Boneless, skinless thighs stay juicy through grilling and the final simmer in the sauce.
- Kashmiri chilli adds colour: Kashmiri chilli brings a deep red tone and moderate warmth rather than aggressive heat.
- Cream controls richness: Double cream gives the sauce a fuller texture; a lighter cooking cream will make the finish less rich.
Make-ahead tips
- Marinate ahead: The chicken can be coated in the yoghurt marinade in advance, then grilled when ready to cook.
- Reheat gently: Warm leftovers over low heat until piping hot, adding a small splash of water if the sauce has thickened.
- Freeze cooked portions: Cool completely before freezing, then defrost overnight in the fridge and reheat gently.

Ingredients
Marinade and chicken
Masala sauce
Instructions
- In a mixing bowl, combine the yogurt with the garam masala, ground cumin, ground coriander, ground Kashmiri chili, finely grated ginger, finely grated garlic, and 1 tsp of the fine sea salt. Cut the chicken into bite-sized pieces and stir into the marinade until well coated. Cover and chill for 45 minutes.
- Heat a grill to high. Thread the chicken onto skewers if you like, or lay it directly on the grill bars, then cook for 8 to 12 minutes, turning, until lightly charred and just cooked through. Set aside while you make the sauce.
- Heat the ghee in a large frying pan over medium heat. Finely chop the onion, add it to the pan with the remaining 1 tsp fine sea salt, and cook for 10 to 12 minutes until soft and lightly golden. Keep the heat moderate so it sweetens rather than browns too quickly.
- Stir in the canned chopped tomatoes and bring to a gentle simmer. Cook for 15 minutes, stirring now and then, until the sauce thickens and the tomatoes taste cooked out. If it starts to catch, lower the heat slightly.
- Add the charred chicken and any resting juices to the pan and simmer for 8 to 10 minutes until the chicken is tender and the sauce clings to it. Reduce the heat to low, then stir in the double cream. Warm for 2 minutes without boiling, then taste and adjust with a pinch more fine sea salt if needed.

Serving suggestions
This recipe pairs well with:
Tips
- For the best flavour, make sure the grill is properly hot so the chicken picks up a little char before it finishes cooking through.
- Keep the sauce at a gentle simmer so it reduces and sweetens; a rapid boil can make it taste harsh and may cause it to catch.
- If serving vulnerable groups, use pasteurised yogurt and ensure the chicken is cooked until piping hot throughout.
Substitutions
- Replace Chicken thighs with Chicken breast boneless skinless, but reduce the final simmer with the sauce to 5 to 7 minutes to keep it juicy.
- Replace Ghee with Unsalted butter for a similar richness, keeping the heat a touch lower to prevent it browning too quickly.
- Replace Double cream with Cooking cream for a lighter finish, simmering a minute longer to thicken.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a pan over low heat until piping hot, adding a small splash of water if the sauce has thickened. Freeze for up to 2 months; defrost overnight in the fridge before reheating.
