Japanese Chicken Rice Bowl with Soy, Mirin and Ginger
Why this recipe works
- Glossy savoury-sweet sauce: Soy sauce, mirin, ginger and garlic reduce around the chicken to create a concentrated glaze with depth and aroma.
- Built for rice: Short-grain rice catches the sauce well, giving each bowl the soft, sticky texture that suits Japanese-style rice dishes.
- Efficient cooking: The chicken cooks in bite-sized pieces while the rice steams, keeping the full meal manageable for a weeknight lunch or dinner.

Timing notes
- Let the rice finish steaming: Keep the rice covered during the 10-minute rest so the grains finish cooking gently and stay fluffy rather than wet.
- Serve after wilting the spinach: The bowl is best assembled once the spinach has just wilted and the sauce is still glossy, before the greens soften too much.
Ingredient notes
- Use short-grain rice: Short-grain rice gives the bowl its soft, slightly sticky base and holds the soy-mirin sauce better than long-grain rice.
- Choose fresh ginger: Firm, fresh ginger gives the sauce a clean warmth that cuts through the richness of the chicken thigh.
- What mirin adds: Mirin brings gentle sweetness and sheen to the glaze; dry sherry can work as a substitute, though the flavour will be less rounded.
Common mistakes
- Reducing the sauce too hard: Keep the sauce at a lively simmer rather than a fierce boil, as soy sauce can become too salty if it reduces too aggressively.
- Adding spinach too early: Add the spinach at the end so it stays bright and tender instead of collapsing into the sauce.
- Check the chicken properly: Because thigh pieces vary in size, make sure they are piping hot throughout with no pink remaining before serving.
Make-ahead tips
- Good for short-term meal prep: Leftovers can be cooled quickly and refrigerated in a sealed container for up to 2 days.
- Reheat gently: Warm in a frying pan with a splash of water over low heat, or microwave covered, until steaming throughout.
- Best texture on the day: The rice and spinach are at their best freshly cooked, so make ahead for convenience rather than peak texture.

Ingredients
Instructions
- Rinse the short-grain rice in cold water until the water runs mostly clear. Tip into a saucepan, add 450 ml water, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes.
- Meanwhile, peel and finely grate the ginger, and finely grate the garlic. Slice the chicken thighs into bite-sized pieces. Thinly slice the spring onion, keeping a small handful for topping.
- Heat the sesame oil in a large frying pan over medium-high heat. Add the chicken and cook for 5 to 7 minutes, turning, until lightly browned and nearly cooked through. Stir in the ginger and garlic and cook for 30 seconds until fragrant.
- Pour in the soy sauce and mirin and bring to a lively simmer. Cook for 3 to 5 minutes, stirring, until the sauce is glossy and lightly thickened and the chicken is cooked through. Reduce the heat to low.
- Add the spinach to the pan a handful at a time and toss until just wilted, 1 to 2 minutes. Stir in most of the spring onion, then taste and adjust by simmering briefly if you want a slightly stronger glaze. Take off the heat.
- Fluff the rice and divide between two bowls. Spoon the chicken, spinach and sauce over the rice. Finish with the reserved spring onion and the roasted sesame seeds.
