Japanese Veggie Bento Bowl with Miso Aubergine
Why this recipe works
- Deep savoury flavour: Miso, soy sauce and sesame oil coat the aubergine so it roasts into a rich, glossy topping for the rice.
- Balanced textures: Soft sushi rice and tender aubergine are lifted by crisp cucumber, grated carrot, chewy nori and sesame seeds.
- Good for lunch prep: The rice, roasted aubergine and vegetables can be stored as separate components, keeping the fresh toppings from softening.

Ingredient notes
- Choose a suitable miso: White or yellow miso gives a rounded, gently sweet flavour; red miso makes the aubergine deeper, saltier and more intense.
- Add nori at the end: Snip the nori over the finished bowls just before serving so it keeps its savoury aroma and light chew.
- Frozen edamame works well: Cook it straight from frozen, then drain thoroughly so excess water does not dilute the rice or miso aubergine.
Texture tips
- Let the rice steam: Keeping the rice covered off the heat allows the grains to finish steaming evenly before you fluff them.
- Keep wet toppings controlled: Add only a little of the cucumber vinegar to each bowl, especially if packing the recipe ahead.
- Roast the aubergine fully: The aubergine should be deeply browned and soft in the centre; under-roasted pieces can taste spongy rather than silky.
Make-ahead tips
- Store components separately: Keep the rice, aubergine, cucumber, carrot, edamame, nori and sesame in separate containers for the best texture.
- Reheat only the rice: Warm the rice with a little water until piping hot, then add the vegetables, nori and sesame after reheating.
- Pack with care: If preparing for lunch, cool and refrigerate the rice promptly, then assemble the bowl close to serving where possible.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Rinse the rice in a colander under cold water until the water runs mostly clear, then tip into a saucepan with 240 ml water. Bring to the boil, cover, reduce to low and cook for 12 minutes, then take off the heat and leave covered for 10 minutes.
- Meanwhile, cut the aubergine into 2 cm chunks and spread on a baking tray. In a bowl, whisk the miso paste with the soy sauce, sesame oil and 1 tbsp rice vinegar, then toss with the aubergine until well coated. Roast for 18 to 22 minutes, turning once, until deeply browned and tender.
- Thinly slice the cucumber and put it in a bowl with the remaining 1 tbsp rice vinegar. Leave to pickle while you finish the rest, stirring once or twice. Grate the carrot and set aside.
- Bring a small pan of water to the boil and cook the edamame for 3 to 4 minutes until bright green and tender. Drain well. Fluff the rice, then fold in half of the roasted sesame seeds.
- Divide the rice between two bowls. Top with the miso-roasted aubergine, pickled cucumber (including a little of its vinegar), edamame and carrot. Snip the nori into thin strips over the top and finish with the remaining roasted sesame seeds.
Recipe notes
Tips
- For the best texture, let the rice sit covered off the heat for the full 10 minutes, then fluff gently so the grains stay intact.
- If your edamame is frozen, cook it straight from frozen and drain thoroughly so it does not water down the bowl.
- Food safety: if serving to anyone vulnerable, ensure the rice is cooled quickly and refrigerated within 1 hour, then eat within 24 hours.
Substitutions
- Replace Rice vinegar with White wine vinegar for a slightly fruitier, less sharp pickle.
- Replace Miso paste with Red miso for a deeper, saltier flavour; loosen with an extra 1 tsp Rice vinegar if needed.
- Replace Roasted sesame seeds with White sesame seeds, toasting them briefly in a dry pan until fragrant.
Storage
- Refrigerate up to 2 days
- Store the rice and toppings in separate airtight containers. Reheat the rice in the microwave with a splash of water until piping hot, and add the cucumber, carrot, nori and sesame seeds after reheating.
