Rosca de Reyes (Epiphany Ring Bread with Orange and Candied Fruit)
Why this recipe works
- Gentle citrus depth: Orange zest, vanilla and butter give the enriched dough a warm, fragrant sweetness without making it heavy.
- Proper enriched dough structure: Kneading before and after adding the butter helps develop a smooth, elastic dough that bakes into a soft, sliceable crumb.
- Made for sharing: The ring shape, decorative topping and soft texture make the bread easy to portion for a table or celebration.

Timing notes
- Watch the dough, not just the clock: The first rise should double the dough, while the second prove should leave the ring puffy and slowly springy when pressed.
- Best texture window: Serve warm or at room temperature once the crumb has settled slightly after baking.
- Cool before slicing: Letting the bread rest briefly on the tray helps the enriched crumb finish setting so slices hold together cleanly.
Texture tips
- Add the butter gradually: Working in the softened butter a little at a time gives the dough time to absorb the fat and become glossy rather than greasy.
- Keep the ring open: Make the centre hole larger than expected before the second prove, as enriched dough expands noticeably as it rises.
- Bake to a deep golden finish: The bread should sound hollow when tapped underneath; baking much beyond that can dry out the crumb.
Authenticity notes
- Epiphany bread: Rosca de Reyes is associated with Día de Reyes, when the ring-shaped loaf is sliced and shared.
- Traditional serving: Hot chocolate is a classic pairing, with coffee also working well against the sweet orange-scented dough.
- Candied fruit topping: Candied orange peel and cherries give the bread its recognisable festive look and a concentrated fruity sweetness.
Make-ahead tips
- Best on the day: The bread is at its softest on the day it is baked, especially once cooled to warm room temperature.
- Refresh before serving: Slices can be warmed in a 160°C (320°F) oven for a few minutes to bring back softness.
- Freeze well wrapped: Freeze the baked bread airtight, then defrost at room temperature before gently warming.

Instructions
- Warm the milk in a saucepan until just lukewarm, then pour into the bowl of a stand mixer. Whisk in 1 tbsp of the caster sugar, then sprinkle over the yeast and leave for 5 to 10 minutes until foamy.
- Add the bread flour, remaining caster sugar, fine sea salt and dried orange zest. Add 3 eggs and the vanilla, then mix with the dough hook on low until a shaggy dough forms.
- Increase to medium speed and knead for 6 to 8 minutes until the dough is smooth and elastic. Add the softened butter a little at a time, mixing until fully incorporated and the dough is glossy and stretchy.
- Shape the dough into a ball and place in a lightly buttered mixing bowl. Cover and leave in a warm place for 60 to 75 minutes, or until doubled in size.
- Tip the dough onto a lightly floured surface and gently press out the air. Shape into a thick rope, join the ends to form a ring, then place on a baking tray and widen the hole so it stays open as it rises.
- Cover and leave to prove for 35 to 45 minutes until puffy and slowly springy when pressed. Meanwhile, heat the oven to 180°C (355°F).
- Make the sweet paste topping by mixing the plain flour and icing sugar, then rubbing in the softened butter until a smooth paste forms. Beat in the remaining egg until cohesive, then press into a thin sheet and cut into long strips.
- Arrange the paste strips over the proved ring, spacing them evenly. Tuck the candied orange peel and candied cherries between the strips, pressing lightly so they adhere.
- Bake for 25 to 30 minutes until deep golden and the bread sounds hollow when tapped underneath. Cool on the tray for 10 minutes, then slice and serve warm or at room temperature.

Serving suggestions
This recipe pairs well with:
Tips
- If the dough feels very sticky after the butter is added, keep kneading for a few minutes; it will become smoother as the gluten develops.
- To help the ring keep its shape, make the centre hole larger than you think you need before the second prove.
- If serving to anyone who is pregnant, elderly, or immunocompromised, use eggs that are stamped as suitable to be eaten raw or lightly cooked.
Substitutions
- Replace candied cherries with extra candied orange peel for a more citrus-forward topping.
- Replace vanilla extract with vanilla bean paste for a stronger vanilla flavour.
Storage
- Refrigerate up to 3 days
- Store airtight; the bread is best on the day but keeps well for up to 3 days. Refresh slices in a 160°C (320°F) oven for 5 to 8 minutes. Freeze well wrapped for up to 2 months and defrost at room temperature before warming.
