Bulgogi Grain Bowl

Korean bulgogi is known for thin slices of beef marinated with soy, garlic, sesame and fruit, then cooked quickly so the edges turn glossy and caramelised while the meat stays tender. In this grain bowl version, those sweet-savoury flavours sit over warm brown rice with crisp carrot, cucumber and spring onion for freshness. Gochujang adds a rounded chilli heat rather than sharp spice, and sesame seeds bring a final nutty finish. It makes a practical lunch bowl with the recognisable flavour of bulgogi in a balanced, easy-to-assemble format.

Why this recipe works

  • Sweet-savoury marinade: Pear, soy sauce, garlic and toasted sesame oil give the beef depth, sweetness and umami before it hits the pan.
  • Fresh contrast: Warm rice and caramelised beef are balanced by crisp cucumber, shredded carrot and spring onion.
  • Fast, hot cooking: Thinly sliced beef cooks quickly over high heat, helping it brown at the edges while staying tender.

Adjust the heat

  • For a milder bowl: Use less gochujang at serving, or offer it on the side so each bowl can be adjusted individually.
  • For more heat: Add extra gochujang to the finished bowl, stirring it through the rice and beef just before eating.
  • Keep the heat rounded: Gochujang is both spicy and slightly sweet, so balance it with the fresh vegetables rather than adding it too heavily.

Ingredient notes

  • Choose tender beef: Sirloin works well because it cooks quickly and stays tender when sliced thinly across the grain.
  • Use a firm ripe pear: A pear that is ripe but still firm grates easily and adds sweetness without making the marinade watery.
  • Slice the beef thinly: Briefly chilling the steak makes it easier to cut into fine slices for quick, even stir-frying.

Common mistakes

  • Avoid crowding the pan: If the beef is piled up, it will steam in its marinade rather than caramelise. Cook in batches if needed.
  • Use high heat: The pan should be very hot before the beef goes in, which helps the marinade reduce quickly and coat the meat.
  • Do not overcook the beef: Thin slices only need a short stir-fry; cooking them too long can make the steak tough.

Make-ahead tips

  • Store the parts separately: Keep rice, beef and raw vegetables in separate airtight containers so the cucumber and carrot stay fresh.
  • Prepare the vegetables early: The carrot, cucumber and spring onion can be cut in advance and added cold when assembling the bowls.
  • Reheat gently: Warm the rice and beef in a frying pan with a small splash of water until piping hot, then add the fresh toppings.

  1. Cook the brown rice in a saucepan of boiling water until tender, about 25–30 minutes. Drain well and cover to keep warm.
  2. Meanwhile, slice the beef as thinly as you can across the grain. Coarsely grate the pear, finely grate the garlic, then mix both with the soy sauce and 1 tbsp of the toasted sesame oil in a bowl.
  3. Add the beef to the marinade and toss well. Leave to stand while you prepare the vegetables, about 10 minutes.
  4. Thinly slice the spring onion. Peel and shred the carrot, then cut the cucumber into thin matchsticks.
  5. Heat a wok or large frying pan over high heat until very hot, then add the remaining 1 tbsp toasted sesame oil. Add the beef with its marinade and stir-fry for 2–4 minutes until caramelised and just cooked through, keeping it moving so it browns rather than stews.
  6. Divide the warm rice between two bowls. Top with the bulgogi beef, carrot, cucumber and spring onion, then add a spoonful of gochujang to each bowl and finish with roasted sesame seeds.

Recipe notes

Tips

  • For the thinnest slices, chill the beef in the freezer for 10 minutes before slicing.
  • Keep the pan very hot and cook the beef in a single layer; if your pan is small, stir-fry in two batches for better caramelisation.
  • If serving to anyone vulnerable to foodborne illness, make sure the beef is cooked through and piping hot.

Substitutions

  • Replace beef sirloin steak with beef ribeye for a richer, more tender bowl.
  • Replace pear with apple for a similar sweetness in the marinade.
  • Replace roasted sesame seeds with toasted sesame seeds if that is what you have.

Storage

  • Refrigerate up to 2 days
  • Store rice, beef and vegetables separately in airtight containers. Reheat the rice and beef in a frying pan with a splash of water until piping hot, and add the cucumber and carrot cold just before serving.
