Thai Mango Sticky Rice Dessert Platter
Why this recipe works
- Glossy, creamy rice: Folding hot steamed sticky rice with sweetened coconut milk lets the grains absorb the liquid and turn soft, cohesive and glossy.
- Fresh contrast: Firm-ripe mango cuts through the richness of the coconut rice with juicy freshness.
- Balanced sweetness: Palm sugar adds a rounded caramel note, while a little salt keeps the coconut sauce from tasting flat.

Timing notes
- Let the rice absorb the coconut milk: The covered resting time after folding in the hot coconut milk is important; it gives the grains time to soften, swell and become glossy.
- Chill briefly, not for too long: A short chill helps the platter hold its shape, but extended chilling can firm up the rice too much.
- Best served soon after assembly: Assemble close to serving so the mango stays fresh and the coconut sauce can be served warm.
Ingredient notes
- Use sticky rice: Choose Thai glutinous sticky rice rather than regular long-grain rice; it gives the dessert its characteristic chewy, cohesive texture.
- Pick ripe but firm mango: Mango should be fragrant and sweet but still firm enough to slice cleanly for a platter.
- Use good coconut milk: Full-flavoured coconut milk gives the rice and sauce a richer finish than thin or watery versions.
Common mistakes
- Boiling the coconut milk: Keep the coconut milk below a boil; high heat can make it split and taste oily.
- Not steaming the rice fully: The rice should be tender and slightly translucent before it is mixed with the coconut milk, otherwise the centre can stay firm.
- Storing fruit and rice together: Keep the mango and sticky rice in separate containers so the fruit stays fresh and the rice can be reheated properly.
Authenticity notes
- Steamed sticky rice: Steaming soaked glutinous rice is the classic method for achieving the chewy texture associated with Thai mango sticky rice.
- Mango and coconut: Sweet coconut sticky rice and ripe mango are the defining pairing; sesame seeds add a simple nutty finish.

Ingredients
Instructions
- Rinse the sticky rice in a sieve under cold water until the water runs mostly clear, then soak it in plenty of cold water for 20 minutes. Drain well and leave in the sieve for a minute to shed excess water.
- Set up a steamer over a large pot of gently simmering water. Steam the soaked rice for 20 to 25 minutes, turning it once halfway through, until the grains are tender and slightly translucent.
- While the rice steams, warm 400 ml of the coconut milk in a saucepan over low heat with the palm sugar and fine sea salt, stirring until dissolved. Keep it hot but do not let it boil.
- Tip the hot steamed rice into a mixing bowl and pour over the sweetened coconut milk. Fold well, cover, and leave for 10 minutes so the rice absorbs the coconut mixture and turns glossy.
- For the warm coconut sauce, heat the remaining 200 ml coconut milk in the saucepan over low heat until steaming, then remove from the heat. Taste and add a tiny pinch more fine sea salt if you want the flavour to pop.
- Peel the mangoes and slice the flesh. Spread the coconut sticky rice on a platter, arrange the mango alongside, spoon over some warm coconut sauce, and finish with roasted sesame seeds.
- Chill the rice and mango briefly for 10 minutes so the platter is easy to assemble and serve neatly. Serve with the remaining coconut sauce warmed gently if needed.
Recipe notes
Tips
- Keep the coconut milk just below a simmer; boiling can cause it to split and taste slightly oily.
- If your palm sugar is very hard, chop it into smaller pieces so it dissolves quickly and evenly.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, keep the cooked rice out of the fridge for as short a time as possible and serve promptly.
Substitutions
- Replace Mango with ripe but firm Peach for a similar juicy sweetness.
- Replace Palm sugar with Light brown sugar for a slightly different caramel note.
Storage
- Refrigerate up to 2 days
- Store the sticky rice and mango separately in airtight containers. Reheat the rice gently in a saucepan with a splash of coconut milk until piping hot, and add the mango only at serving.
