Beef Kofta Kebabs
Why this recipe works
- Warm, savoury seasoning: Cumin, coriander and a little cinnamon give the beef depth without overpowering the herbs, garlic and onion.
- Fast enough for weeknights: The kofta mixture comes together quickly, with only a short chill before shaping and grilling.
- Easy to serve: Flatbreads, yoghurt sauce, lemon wedges and simple salads all work well around the same skewers.

Ingredient notes
- Squeeze the onion well: Removing excess liquid from the grated onion helps the beef mixture hold together on the skewers.
- Avoid very lean mince: A little fat in the beef helps the koftas stay juicy as they grill; very lean mince can cook up drier.
- Use fresh herbs where possible: Fresh parsley brings a cleaner, greener flavour than dried herbs and balances the warm spices.
Common mistakes
- Mixture too loose: If the mixture feels wet or slack, it is more likely to fall from the skewers; the onion should be well squeezed and the meat mixed until tacky.
- Grill flare-ups: Move the skewers to a cooler part of the grill if fat drips cause flare-ups, then keep turning until evenly browned.
- Pan-searing option: When using a frying pan, leave space between skewers so they brown rather than steam.
Make-ahead tips
- Mix ahead: The kofta mixture can be prepared in advance and kept covered in the fridge until you are ready to shape and cook.
- Freeze cooked koftas: Freeze the cooked koftas without the yoghurt sauce, then defrost in the fridge before reheating.
- Reheat gently: Warm the koftas on a grill or in a frying pan until piping hot; cover briefly with a splash of water if they seem dry.
Serving ideas
- Flatbreads: Serve the koftas with warm flatbreads for wrapping, tearing and scooping up the yoghurt sauce.
- Lemon yoghurt sauce: A simple yoghurt and lemon sauce adds coolness and acidity to the spiced beef.
- Fresh lemon: Lemon wedges give a bright finish and are best squeezed over just before eating.

Instructions
- Soak the skewers in water for 20 minutes if using wooden ones. Meanwhile, grate the onion on the coarse side of a grater, then squeeze out as much liquid as you can. Crush the garlic and finely chop the parsley.
- In a mixing bowl, combine the minced beef with the onion, garlic, parsley, ground cumin, ground coriander, ground cinnamon, fine sea salt and black pepper. Mix firmly with your hands for 1 to 2 minutes until the mixture turns tacky and holds together. Cover and chill for 10 minutes to help it bind.
- Divide the mixture into 8 portions and shape each one around a skewer into a long, even sausage, pressing it on firmly. Lightly brush the koftas with extra virgin olive oil. Preheat a grill to medium-high.
- Grill the koftas for 8 to 10 minutes, turning every couple of minutes, until browned all over and cooked through but still juicy. If flare-ups occur, move them to a cooler spot and keep turning. Rest for 3 minutes before serving.
- Stir the greek yogurt with a squeeze of lemon juice and a pinch of fine sea salt, then cut the remaining lemon into wedges. Serve the koftas hot with the yoghurt sauce and lemon wedges for squeezing over.

Serving suggestions
This recipe pairs well with:
Tips
- Squeezing the grated onion well stops the mixture becoming wet and helps the koftas stay on the skewers.
- If you are cooking for anyone vulnerable, make sure the koftas are cooked all the way through with no pink remaining.
- No grill? Cook the skewers in a lightly oiled large frying pan over medium-high heat, turning often, until browned and cooked through.
Substitutions
- Replace greek yogurt with yogurt for a looser, lighter sauce.
- Replace fresh parsley with fresh mint for a different, more cooling herbal note.
Storage
- Refrigerate up to 3 days
- Cool the cooked koftas quickly, then refrigerate in a sealed container. Reheat on a grill or in a frying pan over medium heat until piping hot; add a splash of water and cover briefly if they seem dry. Freeze cooked koftas (without the yoghurt sauce) for up to 2 months and defrost overnight in the fridge before reheating.
