Mujaddara (Lentils and Rice with Caramelised Onions)

Mujaddara brings together lentils, rice and slow-cooked onions in the kind of economical, deeply satisfying dish found across much of the Middle East. The lentils give it an earthy backbone, the rice makes it soft and comforting, and a light seasoning of cumin and cinnamon adds warmth without overpowering the grains. What defines the dish is the generous topping of caramelised onions: sweet, savoury and slightly crisp at the edges, they turn a simple pot of staples into a complete meal. Serve it warm with whole milk yoghurt and lemon for creaminess and brightness, or alongside salads and pickles for a more varied spread.

Why this recipe works

  • Deep savoury flavour: Slowly caramelised onions add sweetness and richness to the earthy lentils and lightly spiced rice.
  • Simple and satisfying: Lentils and rice cook into a hearty, filling base using everyday pantry ingredients.
  • Balanced finish: Yoghurt and lemon cut through the richness of the onions and brighten the finished dish.

Timing notes

  • Best served warm: Serve once the rice has steamed and been fluffed, so the grains stay separate and the onions remain glossy.
  • Do not skip the covered rest: Leaving the pot covered off the heat lets the rice finish steaming gently and helps the lentils and grains settle without turning mushy.

Ingredient notes

  • Use brown lentils: Brown lentils hold their shape well and give mujaddara its familiar earthy texture.
  • Rinse the rice well: Rinsing removes excess surface starch, helping the basmati cook up lighter rather than sticky.
  • Finish with lemon: A squeeze of lemon at the table lifts the lentils, rice, and onions without changing the character of the dish.

Make-ahead tips

  • Good for meal prep: The lentils and rice keep well in the fridge and reheat best with a splash of water to restore moisture.
  • Keep toppings separate: Add the yoghurt and lemon only when serving, especially if storing or freezing portions.
  • Freezer-friendly base: Freeze the mujaddara without yoghurt or lemon, then defrost overnight in the fridge before reheating.

Serving ideas

  • Serve with salad: A crisp cucumber, tomato, or herb salad works well alongside the warm lentils and rice.
  • Add yoghurt: Whole milk yoghurt adds cool creaminess and balances the sweetness of the onions.
  • Use extra lemon: Lemon wedges let each person adjust the brightness at the table.

  1. Halve and thinly slice the onion. Heat 4 tbsp of the olive oil in a large frying pan over medium heat, add the onion and a pinch of the salt, then cook for 25 to 30 minutes, stirring often, until deeply golden and caramelised. If it starts to catch, lower the heat and add a splash of water to loosen the pan.
  2. Meanwhile, rinse the lentils in a colander. Put them in a large pot with 900 ml of the water and bring to the boil, then reduce to a steady simmer for 15 minutes. The lentils should be starting to soften but still hold their shape.
  3. Rinse the rice until the water runs mostly clear. Stir the rice into the pot with the cumin, cinnamon, remaining salt and black pepper, plus the remaining 300 ml water. Cover and cook on a very low heat for 15 minutes, until the rice is tender and the liquid is absorbed.
  4. Turn off the heat and leave the pot covered for 10 minutes to steam. Fluff gently with a wooden spoon, then drizzle over the remaining 1 tbsp olive oil. Taste and adjust seasoning if needed.
  5. Serve the mujaddara topped with the caramelised onions. Spoon the yogurt alongside and finish with a squeeze of lemon over each portion. Serve straight away while warm.

Serving suggestions

This recipe pairs well with:

Yoghurt Lemon wedges

Tips

  • For the best onions, keep the heat medium-low and stir regularly; the colour should build slowly to a deep golden brown without burning.
  • If you are serving anyone who should avoid raw dairy, use pasteurised whole milk yogurt.

Substitutions

  • Replace basmati rice with long-grain white rice; keep the same method but expect the cooking time to vary slightly.
  • Replace whole milk yogurt with greek-yogurt for a thicker, tangier topping.

Storage

  • Refrigerate up to 4 days
  • Cool the lentils and rice quickly, then refrigerate in a sealed container. Reheat with a splash of water in a covered pot over low heat until piping hot, or in the microwave, stirring halfway; add the yogurt and lemon only when serving. Freeze the mujaddara (without yogurt and lemon) for up to 2 months and defrost overnight in the fridge before reheating.
