Caribbean Chickpea Bowl

A Caribbean chickpea bowl is a warm, satisfying grain bowl that brings spiced pulses, rice and vegetables together in one practical meal. Here, fluffy basmati rice gives the bowl structure, while roasted sweet potato adds sweetness and soft, caramelised edges. Chickpeas are coated with garlic, cumin and allspice for a gently aromatic, savoury base, then finished with a sharp lime dressing and fresh coriander. It works well as a vegan lunch because it is hearty without feeling heavy, with enough citrus and herbs to keep the spices bright.

Why this recipe works

  • Warm spice base: Briefly cooking the garlic, cumin and allspice in oil helps coat the chickpeas and gives the bowl a deeper savoury flavour.
  • Bright finish: Lime zest and juice cut through the sweetness of the roasted sweet potato and keep the rice and chickpeas tasting lively.
  • Good for meal prep: The rice, chickpeas and sweet potato store and reheat well, with the dressing and herbs added at the end for freshness.

Ingredient notes

  • Allspice matters: Allspice brings the warm, gently sweet character associated with many Caribbean-style savoury dishes, so it is more distinctive here than a generic mixed spice.
  • Adjust the lime to taste: Use extra lime juice if the bowl tastes too soft or sweet after the sweet potato is added.
  • Use fresh herbs at the end: Fresh coriander gives the bowl its clean finish; dried herbs will not provide the same brightness.

Texture tips

  • Caramelise the sweet potato: Give the sweet potato enough space on the tray so the edges roast and brown rather than steam.
  • Let the rice steam-dry: After draining, covering the rice briefly helps excess moisture disperse and keeps the grains lighter in the bowl.

Make-ahead tips

  • Keep the fresh elements separate: Store the cooked rice, chickpeas and sweet potato together, but add the lime dressing and coriander after reheating.
  • Freeze without dressing: The cooked components can be frozen, but the citrus dressing and herbs are best added fresh after defrosting and reheating.
  • Loosen when reheating: Add a small splash of water before microwaving to help the rice and chickpeas reheat evenly without drying out.

  1. Heat the oven to 220°C (430°F). Peel the sweet potato and cut into 2 cm cubes, then toss on a baking tray with 1 tbsp olive oil and 0.25 tsp fine sea salt. Roast for 25 to 30 minutes, turning once, until tender and caramelised at the edges.
  2. Meanwhile, rinse the basmati rice until the water runs mostly clear. Cook in a saucepan of lightly salted boiling water until tender, 10 to 12 minutes, then drain well in a colander. Cover and set aside to steam-dry while you finish the chickpeas.
  3. Peel and finely grate the garlic. Warm 1 tbsp olive oil in a frying pan over medium heat, add the garlic, cumin and allspice, and cook for 30 to 60 seconds until fragrant. Drain and rinse the chickpeas, add to the pan with 0.5 tsp fine sea salt, and cook for 6 to 8 minutes until hot and well coated.
  4. Finely chop the fresh coriander. Zest the lime into a mixing bowl, then squeeze in the juice and whisk with the remaining 1 tbsp olive oil and the remaining 0.5 tsp fine sea salt. Taste and adjust with a little more lime juice if you want it sharper.
  5. Divide the rice between two bowls and top with the roasted sweet potato and spiced chickpeas. Spoon over the lime dressing and finish with the fresh coriander. Serve straight away while everything is warm.

Recipe notes

Tips

  • For extra flavour, let the chickpeas sit off the heat for 2 minutes after cooking so the spices settle into the oil before serving.
  • If you are cooking for someone sensitive to raw garlic, cook the garlic gently for a little longer before adding the spices so it softens without browning.

Substitutions

  • Replace Fresh coriander with Fresh parsley for a milder, more herby finish.
  • Replace Lime with Lemon for a slightly softer citrus dressing.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then store the rice, chickpeas and sweet potato together in an airtight container for up to 3 days. Reheat in the microwave until piping hot, adding a splash of water to loosen, and add the lime dressing and fresh coriander after reheating. Freeze the cooked components (without dressing and herbs) for up to 2 months; defrost overnight in the fridge before reheating.
