Chicken Tortilla Soup
Why this recipe works
- Layered broth: Softened onion, garlic, cumin and chilli form a savoury base before the tomatoes and stock are added.
- Good contrast: Tender shredded chicken, beans and corn are balanced by crisp tortilla strips and creamy avocado.
- Practical for leftovers: The soup stores and freezes well when the tortilla strips, avocado and lime are kept separate until serving.

Adjust the heat
- For a milder soup: Swap the Kashmiri chilli for smoked paprika, or use less chilli and add extra lime at the end for brightness.
- For more heat: Add extra chilli gradually when cooking the onion mixture, tasting the broth before serving.
- Keep it rounded: Lime and avocado help soften the chilli warmth without making the soup taste flat.
Texture tips
- Keep the tortilla strips crisp: Fry them close to serving time and scatter them over the bowls rather than stirring them through too early.
- Protect the chicken: Keep the broth at a gentle simmer once the chicken is added; vigorous boiling can make the meat tougher.
Make-ahead tips
- Cook the soup ahead: The soup base can be made in advance and reheated gently until piping hot before serving.
- Hold back the toppings: Store tortilla strips, avocado and lime separately so the toppings stay crisp, fresh and bright.
- Freeze without garnishes: Freeze the soup without the tortilla strips or avocado, then add fresh toppings after reheating.
Ingredient swaps
- Use chicken breast instead: Chicken breast can replace thighs for a leaner version; simmer more gently and for a shorter time so it stays moist.
- Make it smokier: Smoked paprika can stand in for Kashmiri chilli when you want less heat and a softer, smoky flavour.

Ingredients
Instructions
- Finely chop the onion and crush the garlic. Cut the kernels from the corn cob, then stack the tortillas and slice them into thin strips. Dice the avocado and cut the lime into wedges.
- Heat 1 tbsp olive oil in a large pot over a medium heat. Add the onion with a pinch of the salt and cook for 6 to 8 minutes until softened, then stir in the garlic, cumin and Kashmiri chilli for 30 seconds until fragrant.
- Add the chicken thighs and turn to coat in the spiced onion mixture. Pour in the chopped tomatoes and chicken stock, then bring to a gentle simmer. Cook for 15 minutes, stirring occasionally, until the chicken is cooked through.
- Stir in the black beans and sweetcorn, then simmer for 5 minutes until the corn is tender and the soup tastes rounded. Lift out the chicken, shred it with two forks, then return it to the pot. Season with the remaining salt and the black pepper, then squeeze in a little lime to taste.
- Meanwhile, heat the remaining 1 tbsp olive oil in a frying pan over a medium-high heat. Fry the tortilla strips for 2 to 4 minutes, tossing, until crisp and lightly golden. Drain briefly on a plate and season with a pinch of salt.
- Ladle the soup into bowls and top with the tortilla strips and avocado. Serve with extra lime wedges for squeezing over at the table.
Recipe notes
Tips
- Keep the soup at a gentle simmer after adding the stock; a hard boil can make the chicken tough.
- For the best crunch, fry the tortilla strips just before serving so they stay crisp on top.
- If serving to anyone vulnerable, make sure the chicken is piping hot all the way through before serving.
Substitutions
- Replace Chicken thighs with Chicken breast for a leaner soup; reduce the simmering time by about 3 to 5 minutes so it stays juicy.
- Replace Ground Kashmiri chili with Smoked paprika for a milder, smokier heat.
Storage
- Refrigerate up to 3 days
- Cool the soup quickly, then refrigerate in a sealed container for up to 3 days. Freeze the soup (without tortilla strips or avocado) for up to 3 months; defrost overnight in the fridge and reheat in a pot over a medium heat until piping hot. Store tortilla strips airtight at room temperature and add fresh avocado and lime when serving.
