Vegan Jackfruit Mole Tacos
Why this recipe works
- Layered mole-style flavour: Ancho chilli, cumin, cinnamon, cocoa and toasted sesame create a deep, smoky-savoury sauce without a long simmer.
- Freshness balances the richness: Red onion, coriander and lime cut through the earthy sauce and keep the tacos bright.
- Good for planning ahead: The jackfruit filling stores and freezes well, then reheats with a splash of water while the tortillas are warmed fresh.

Ingredient notes
- Use young jackfruit in brine: Choose young jackfruit rather than ripe jackfruit, which is sweet and unsuitable for a savoury taco filling.
- Dry the jackfruit well: Rinsing and squeezing out excess brine helps the jackfruit colour lightly in the pan instead of steaming.
- Ancho brings warmth, not sharp heat: Ancho chilli powder gives the sauce its mild smokiness and rounded dried-fruit notes rather than aggressive spice.
Texture tips
- Simmer until it shreds easily: The filling is ready when the sauce has thickened and the jackfruit breaks apart easily under a spoon.
- Warm tortillas just before serving: Heating the corn tortillas briefly makes them pliable and lightly toasted, helping them hold the saucy filling.
Make-ahead tips
- Make the filling in advance: Cook the jackfruit mole filling ahead and refrigerate it in an airtight container for up to 3 days.
- Freeze the filling only: Freeze the jackfruit mole without the tortillas or toppings, then defrost overnight in the fridge before reheating.
- Reheat gently: Warm the filling in a saucepan over a low heat with a splash of water until piping hot and glossy.
Serving ideas
- Add crunch: A crisp slaw or finely sliced radishes work well with the soft, saucy jackfruit.
- Serve with simple sides: Pair with black beans, rice or grilled corn for a fuller dinner.
- Finish with lime: A squeeze of lime just before eating lifts the cocoa and chilli notes in the sauce.

Ingredients
Instructions
- Toast the sesame seeds in a dry saucepan over a medium heat for 2 to 3 minutes, stirring, until fragrant and lightly golden. Tip into a blender and set the pan back on the hob.
- Add the yellow onion to the blender (roughly chopped is fine), along with the garlic, ancho chilli powder, cumin, cinnamon, tomatoes, cocoa powder and hot water. Blend until smooth.
- Heat the olive oil in a large frying pan over a medium heat. Add the jackfruit and cook for 4 to 5 minutes, stirring, to drive off excess moisture and lightly colour the edges.
- Pour in the blended mole-style sauce and stir well, then season with the fine sea salt. Bring to a gentle simmer and cook for 12 to 15 minutes, stirring occasionally, until thickened and the jackfruit shreds easily when pressed with a spoon.
- While the sauce simmers, finely slice the red onion and roughly chop the fresh coriander. Cut the limes into wedges.
- Warm the corn tortillas in a dry frying pan over a medium heat for about 20 to 30 seconds per side, or until pliable and lightly toasted. Fill with the jackfruit mole, then top with red onion and coriander and finish with a squeeze of lime.
Recipe notes
Tips
- For the best texture, rinse the jackfruit well, then squeeze it dry before cooking so it browns rather than steams.
- If the sauce thickens too quickly, loosen it with a splash of water and keep it at a gentle simmer so it stays glossy.
- If serving to anyone who is pregnant, elderly, very young, or immunocompromised, make sure the filling is piping hot all the way through before serving.
Substitutions
- Replace olive oil with sunflower oil for a more neutral flavour.
- Replace red onion with yellow onion for a softer, less sharp topping.
- Replace lime with lemon for a similar bright finish.
Storage
- Refrigerate up to 3 days
- Store the jackfruit mole filling in an airtight container in the fridge. Reheat in a saucepan over a low heat with a splash of water until piping hot, then warm the corn tortillas fresh. Freeze the filling only, then defrost overnight in the fridge before reheating.
