Enchiladas Verdes with Chicken and Crema

Enchiladas verdes are a Mexican favourite of softened corn tortillas wrapped around a savoury filling and covered with a vivid green sauce. Here the character comes from tomatillos, jalapeño, garlic, lime and coriander, giving the sauce its tangy brightness and gentle chilli heat. Shredded chicken makes the filling satisfying without weighing the dish down, while crema, queso fresco, sliced onion and fresh coriander add coolness, saltiness and freshness at the end. Served hot from the baking dish, these enchiladas suit an easy dinner but still feel generous enough for sharing.

Why this recipe works

  • Bright, layered sauce: Simmered tomatillos, onion, garlic, jalapeño, coriander and lime create a green sauce that is sharp, savoury and aromatic.
  • Richness balanced by acidity: Crema and queso fresco soften the chilli heat, while lime and tomatillos keep the finished dish fresh rather than heavy.
  • Sauce-coated tortillas: Warming and dipping the corn tortillas before rolling helps them stay pliable and absorb flavour as they bake.

Adjust the heat

  • For less heat: Remove the jalapeño seeds and membranes before cooking, or use a milder green chilli.
  • For more heat: Keep the jalapeño seeds in, or add an extra green chilli if you prefer a sharper kick.
  • Keep the sauce bright: If the sauce tastes too hot, extra lime and crema at serving help balance the chilli without dulling the flavour.

Ingredient notes

  • Tomatillos: Rinse tomatillos well after removing the husks; their sticky coating can taste slightly bitter if left on.
  • Corn tortillas: Warm the tortillas before filling so they bend easily and are less likely to split when rolled.
  • Cheese swaps: Feta can stand in for queso fresco, but it is saltier and firmer, so use it with that stronger finish in mind.

Texture tips

  • Coat, but do not drown: Spread sauce under and over the enchiladas, making sure the edges are covered without leaving them sitting in excess liquid.
  • Rest before topping: A short rest after baking lets the tortillas settle and makes the enchiladas easier to serve intact.
  • Blend the sauce well: Blending the tomatillo mixture until smooth gives the sauce a more even texture and helps it coat the tortillas properly.

Make-ahead tips

  • Prepare components ahead: The green sauce and shredded chicken can be made in advance, then warmed before assembling the enchiladas.
  • Best for texture: For the freshest result, keep the crema, queso fresco, sliced onion and coriander separate until just before serving.
  • Reheat gently: Reheat covered at 180°C (355°F) until piping hot, adding a little water if the sauce has thickened in the fridge.

  1. Heat the oven to 200°C (390°F). Peel and quarter the onion; thinly slice a quarter and set it aside for serving. Roughly chop the remaining onion, and peel the garlic.
  2. Trim the jalapenos (remove the seeds for less heat). Remove the husks from the tomatillos and rinse away any sticky residue, then halve any large ones. Pick the coriander leaves and tender stems, reserving a small handful for finishing.
  3. Warm 1 tbsp sunflower oil in a saucepan over medium heat. Add the chopped onion and cook for 5 minutes until softened, then add the garlic and jalapenos and cook for 1 minute. Tip in the tomatillos with 250 ml water, bring to a simmer, and cook for 10 minutes until the tomatillos are soft and dull green.
  4. Transfer the tomatillo mixture to a blender and add most of the coriander, plus the juice of the lime. Blend until smooth, then taste and adjust with a little more lime juice if you like it sharper. Pour the sauce back into the saucepan and keep it warm over low heat.
  5. Heat the remaining 1 tbsp sunflower oil in a frying pan over medium-high heat. Add the chicken thighs and cook for 6 to 8 minutes, turning, until cooked through and lightly browned. Tip onto a board, rest for 2 minutes, then shred the chicken with two forks.
  6. Pour about a third of the warm green sauce into a baking dish and spread it out. Warm the corn tortillas briefly in a dry frying pan so they are pliable. Dip each tortilla into the sauce, fill with shredded chicken, roll up, and arrange seam-side down in the dish.
  7. Spoon the remaining sauce over the enchiladas, making sure the edges are well coated. Bake for 15 minutes until bubbling and hot throughout. Rest for 5 minutes before topping.
  8. Drizzle over the mexican crema, crumble over the queso fresco, and scatter with the reserved sliced onion and coriander. Serve straight away while the tortillas are tender and the sauce is lively.

Recipe notes

Tips

  • For a smoother sauce, blend while the tomatillos are still hot, but vent the blender lid slightly and cover with a tea towel to avoid pressure build-up.
  • If you are sensitive to chilli heat, remove the jalapeno seeds and membranes before cooking, and use a little extra lime juice at the end to keep the flavour bright.
  • Food safety: make sure the chicken is cooked until piping hot all the way through, with no pink remaining.

Substitutions

  • Replace mexican crema with crème fraîche for a similar tang and richness.
  • Replace queso fresco with feta cheese for a saltier, firmer finish.
  • Replace jalapeno pepper with green chili pepper for a slightly different heat and flavour.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then cover and refrigerate for up to 3 days. Reheat in a 180°C (355°F) oven for 15 to 20 minutes until piping hot; add a splash of water if the sauce has thickened. Freeze (preferably before adding mexican crema and queso fresco) for up to 2 months, then thaw overnight in the fridge and bake to reheat.
