Churros with Chocolate Dipping Sauce
Why this recipe works
- Crisp ridged exterior: The star nozzle creates grooves that fry up crisp and hold the cinnamon sugar coating well.
- Sweetness with depth: Cinnamon sugar gives the churros warmth, while dark chocolate keeps the dipping sauce rich rather than overly sweet.
- Choux-style dough: Cooking the flour into the hot milk mixture helps form a sturdy dough that pipes cleanly and holds its shape in the oil.

Timing notes
- Serve straight away: Churros are at their best soon after frying, when the outside is crisp and the centre is still warm.
- Cool the dough briefly: Letting the dough cool before adding the eggs helps keep the mixture glossy and stable rather than scrambling the eggs.
Texture tips
- Keep the oil steady: Maintain the oil close to 180°C (355°F) so the churros brown evenly without becoming greasy or undercooked inside.
- Drain, then coat: Drain briefly on kitchen paper before rolling in cinnamon sugar so the coating clings without turning damp.
Common mistakes
- Frying too many at once: Work in batches so the oil temperature does not drop sharply, which can make the churros absorb oil.
- Dough that is too stiff: The dough should be thick and glossy but still pipe smoothly; if it feels tight, beat it briefly before filling the piping bag.
Serving ideas
- Chocolate sauce: Serve with the warm dark chocolate dipping sauce while it is fluid and glossy.
- Hot drinks: Pair with coffee, hot chocolate or strong tea to balance the sweetness.

Churros and cinnamon sugar
Chocolate dipping sauce
Instructions
- Mix the caster sugar with 2 tsp ground cinnamon in a shallow bowl and set aside for coating. Fit a piping bag with a large star nozzle. Line a tray with kitchen paper for draining.
- Make the churro dough: put 250 ml whole milk, the unsalted butter and fine sea salt in a saucepan and bring to a gentle simmer. Tip in the plain flour all at once and beat vigorously with a wooden spoon until a smooth dough forms and pulls away from the pan. Cook for 1 minute, stirring, to dry the dough slightly.
- Scrape the dough into a mixing bowl and leave for 5 minutes so it cools slightly. Beat in the eggs one at a time until the dough is glossy and thick, then mix in the vanilla extract. The dough should hold its shape but pipe smoothly.
- Pour the sunflower oil into a large pot to a depth of about 5 cm and heat to 180°C (355°F). Pipe 10 to 12 cm lengths of dough into the oil, snipping each one off cleanly, and fry in batches. Cook for 3 to 4 minutes, turning, until deep golden and crisp.
- Lift the churros out with a slotted spoon and drain briefly on the paper-lined tray. While still warm, roll them in the cinnamon sugar to coat well. Keep warm while you fry the remaining batches.
- Make the chocolate dipping sauce: warm 200 ml whole milk in a saucepan over low heat until steaming but not boiling. Add the dark baking chocolate and stir until melted and thick, then stir in 0.5 tsp ground cinnamon. Serve the churros straight away with the warm sauce for dipping.
Recipe notes
Tips
- If the dough feels too stiff to pipe, beat it for 30 seconds more to loosen it slightly; it should be glossy and just hold a peak.
- Keep the oil close to 180°C (355°F); if it is cooler the churros will absorb oil, and if it is hotter they will brown before cooking through.
- This recipe contains eggs; if serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs stamped with the British Lion mark or an equivalent pasteurised egg.
Substitutions
- Replace vanilla extract with 0.5 tsp ground cinnamon for a more cinnamon-forward churro.
- Replace caster sugar with granulated sugar for a slightly crunchier coating.
- Replace whole milk with milk-and-cream for a richer, thicker chocolate dipping sauce.
Storage
- Refrigerate up to 2 days
- Churros are best eaten fresh. Store leftover churros and chocolate sauce separately in the fridge; reheat churros in a 200°C (390°F) oven for 6 to 8 minutes until hot and crisp, and warm the sauce gently in a saucepan over low heat, stirring.
