Polenta e Spezzatino (Polenta with Beef Stew)
Why this recipe works
- Built-in depth: Browning the beef first creates savoury fond in the pot, which is lifted by the red wine and carried through the tomato-rich sauce.
- Hearty and satisfying: Tender beef, rosemary and creamy polenta make the dish substantial without needing many extra sides.
- Improves with resting: The stew can be cooked ahead and reheated gently, giving the flavours time to settle while the polenta is made fresh.

Authenticity notes
- Classic pairing: Spezzatino is often served with a soft starch that can absorb the sauce; creamy polenta is one of the most recognisable Italian pairings.
- Home-style finish: The sauce should be rich and spoonable rather than overly reduced, so it can mingle with the polenta in the bowl.
Texture tips
- For tender beef: Keep the stew at a gentle simmer once the meat goes back into the pot; a hard boil can make the beef tighten before it softens.
- For creamy polenta: Stir the polenta often and loosen it with a splash of hot water if it thickens before the stew is ready.
- For a richer sauce: If the stew looks too loose near the end, uncover the pot briefly and let the sauce reduce while stirring now and then.
Ingredient swaps
- Without wine: Use extra beef stock in place of the red wine, then simmer it briefly before adding the tomatoes and returning the beef.
- Cheese alternative: Parmesan can be used instead of Grana Padano for a similar salty, savoury finish.
- Using dried rosemary: Dried rosemary works if fresh is unavailable, but add it with the tomatoes and stock so it has time to soften into the sauce.
Make-ahead tips
- Store separately: Keep the stew and polenta in separate airtight containers so the polenta does not absorb too much sauce as it sits.
- Reheat gently: Warm the stew slowly on the hob until piping hot, and reheat the polenta over low heat with a little water to bring back its creamy texture.
- Freeze the stew: The beef stew freezes well; polenta is best made fresh, as freezing can make its texture grainy.

Instructions
- Finely chop the onion, and dice the carrot and celery. Pat the beef dry, then season it with the salt and pepper.
- Heat the olive oil in a Dutch oven over medium-high heat. Brown the beef in batches for 6 to 8 minutes total, turning until well coloured, then transfer to a plate.
- Lower the heat to medium and add the onion, carrot and celery to the pot. Cook for 8 to 10 minutes, stirring, until softened and lightly golden.
- Pour in the red wine and bring to a lively simmer, scraping up any browned bits. Simmer for 5 to 7 minutes until reduced by about half.
- Stir in the tomatoes and stock, then return the beef and any juices to the pot. Add the rosemary sprigs, bring to a gentle simmer, then cover and cook on low for 70 to 80 minutes until the beef is very tender and the sauce is rich.
- About 20 minutes before serving, make the polenta: bring 1 l water to the boil in a saucepan and season lightly with a pinch of the salt. Whisk in the polenta in a steady stream, then cook on low for 15 to 20 minutes, stirring often, until thick and creamy.
- Remove the rosemary sprigs from the stew and taste for seasoning. Stir most of the Grana Padano into the polenta, reserving a little for serving.
- Spoon the polenta into warm bowls and ladle the spezzatino over the top. Finish with the reserved Grana Padano and a little black pepper.
Recipe notes
Tips
- For a deeper flavour, let the stew simmer uncovered for the last 10 minutes to thicken the sauce, stirring occasionally so it does not catch.
- Keep the polenta creamy by stirring in a splash of hot water if it tightens up while you finish the stew.
- If serving anyone who avoids alcohol, simmer the wine thoroughly as written so the harsh alcohol notes cook off, leaving the flavour behind.
Substitutions
- Replace Grana Padano cheese with parmesan for a similar salty finish.
- Replace red wine with beef stock for a non-alcoholic version; add it at the same point and simmer briefly before continuing.
- Replace fresh rosemary with 1 tsp dried rosemary, added with the tomatoes and stock.
Storage
- Refrigerate up to 3 days
- Cool the stew and polenta quickly, then refrigerate separately in airtight containers. Reheat the stew gently on the hob until piping hot; reheat the polenta with a splash of water, stirring over low heat until creamy again. Freeze the stew for up to 3 months; polenta can be frozen but may turn grainy, so it is best made fresh.
