Slow-Roasted Lamb Shoulder with Za’atar and Lemon
Why this recipe works
- Low, slow roasting: Lamb shoulder benefits from gentle heat, which allows the connective tissue to soften and the meat to become tender without drying out.
- Fragrant seasoning: Za’atar, garlic, lemon zest and olive oil form a savoury paste that seasons the surface and works into the natural seams of the meat.
- Bright pan juices: Lemon juice cuts through the richness of the lamb and keeps the finished roast lively rather than heavy.

Timing notes
- For deeper flavour: The lamb can be rubbed with the za’atar paste up to a day ahead, then chilled uncovered before roasting.
- Before it goes in the oven: Let the chilled lamb sit out briefly before roasting so it is not going into the oven fridge-cold.
- Rest before carving: A 20-minute rest helps the juices settle, making the lamb easier to carve or pull into moist chunks.
Ingredient notes
- Choose shoulder for tenderness: Bone-in lamb shoulder is well suited to long roasting because its fat and connective tissue help keep the meat succulent.
- Za’atar varies by blend: Some za’atar blends are more sesame-heavy, while others are sharper with sumac; taste yours before adjusting the seasoning.
- Use lemon to balance richness: The citrus should brighten the roast without dominating it, so spoon the pan juices over the meat to taste when serving.
Common mistakes
- Letting the pan dry out: If the pan juices reduce too far during roasting, add a small splash of water and baste to keep the coating glossy.
- Over-browning the top: Cover the lamb loosely with foil if the surface darkens before the meat is fully tender.
- Carving too soon: Cutting immediately after roasting can make the juices run out onto the board rather than stay in the meat.
Serving ideas
- Serve with grains or bread: Couscous, rice, bulgur or warm flatbreads are good for catching the lemony za’atar pan juices.
- Add something fresh: A crisp cucumber salad, tomato salad or herby greens help balance the richness of the lamb.
- Finish with a cool sauce: A spoonful of yoghurt-style sauce or tahini sauce works well alongside the roast, especially for serving in flatbreads.

Ingredients
Instructions
- Heat the oven to 160°C (320°F). Peel and crush the garlic, then finely zest both lemons and squeeze their juice into a bowl.
- Stir the garlic, lemon zest, lemon juice, za'atar, fine sea salt, black pepper and olive oil into a loose paste. Rub it all over the lamb, working it into any seams and crevices.
- Put the lamb in a roasting pan and roast for about 4 hours, basting with the pan juices a couple of times, until very tender and a fork twists easily in the meat. If the top is browning too quickly, cover loosely with foil.
- Rest the lamb in the pan for 20 minutes so the juices settle. Carve or pull into chunks, then spoon over the lemony, za'atar pan juices to serve.
Recipe notes
Tips
- For deeper flavour, rub the lamb with the paste up to 24 hours ahead and chill uncovered, then bring back towards room temperature for 30 minutes before roasting.
- If the pan looks dry during roasting, add a small splash of water and scrape up the browned bits when basting to keep the coating glossy.
Substitutions
- Replace Lamb shoulder with Lamb leg boneless for a leaner roast; start checking for tenderness after 2.5 to 3 hours as it can cook faster.
- Replace Lemon with Lime for a sharper citrus note, using the same zest and juice method.
Storage
- Refrigerate up to 3 days
- Cool leftovers quickly, then refrigerate in a sealed container with some pan juices. Reheat covered in a 180°C (355°F) oven until piping hot, or warm gently in a saucepan with a splash of water to loosen the juices; freeze for up to 2 months.
