Smoked Haddock Fish Pie

Smoked haddock fish pie is a comforting British-style dinner centred on tender flakes of cured, lightly smoky fish in a creamy parsley sauce, finished with a soft mashed potato topping. The poaching milk becomes the base of the white sauce, carrying the haddock’s savoury depth through the filling, while Dijon mustard and lemon keep the richness from feeling heavy. Baking gives the mash golden ridges and a bubbling sauce beneath; a short rest helps the pie serve cleanly rather than spilling apart. It is well suited to a family meal, with simple vegetables or greens on the side.

Why this recipe works

  • Smoky depth: Poaching the smoked haddock in milk seasons the sauce base with gentle smokiness before the fish is folded back in.
  • Creamy, glossy sauce: A butter-and-flour roux thickens the enriched milk into a smooth parsley sauce that coats the fish without turning heavy.
  • Classic comfort: Flaky fish, creamy sauce, and buttery mash create the familiar contrast that makes fish pie so satisfying.

Timing notes

  • Let it settle before serving: Resting the pie for 10 minutes helps the sauce thicken slightly and allows the mashed potato topping to hold its shape when served.
  • Serve while hot: Fish pie is best served warm from the oven, once the filling is bubbling and the topping has had a brief chance to firm up.

Texture tips

  • Keep the haddock tender: Poach the fish gently rather than boiling it; a low simmer helps the flakes stay moist and prevents the milk from splitting.
  • Create golden peaks: Roughing up the mashed potato with a fork gives the surface more texture, helping it brown attractively in the oven.

Make-ahead tips

  • Assemble ahead: The pie can be assembled in advance, cooled, covered, and refrigerated before baking or reheating until piping hot.
  • Freezer-friendly: Cool completely before freezing. Thaw overnight in the fridge for the best texture before reheating in a 180°C (355°F) oven.

Ingredient notes

  • Choose smoked haddock carefully: Smoked haddock gives the pie its distinctive savoury flavour; check for bones as you flake it into the sauce.
  • Use lemon to balance richness: Lemon zest and juice brighten the creamy sauce, so adjust to taste if the filling needs a little more lift.

  1. Heat the oven to 200°C (390°F). Peel the potatoes, cut into even chunks, and put into a large pot with cold water and 1 tsp of the salt.
  2. Bring the potatoes to the boil, then simmer for 15 to 18 minutes until very tender. Drain well, then return to the hot pot for 1 minute to steam-dry.
  3. Mash the potatoes with 40 g of the butter, 100 ml of the milk, and a pinch of black pepper until smooth. Taste and season with a little more salt if needed, then set aside.
  4. Pour 500 ml of the milk into a saucepan and bring to a gentle simmer. Add the smoked haddock and poach gently for 6 to 8 minutes until the fish flakes easily.
  5. Lift the fish out onto a plate and leave until cool enough to handle, then flake into large pieces, discarding any skin and bones. Strain the poaching milk into a jug and top up with the remaining milk to make 600 ml in total.
  6. In the same saucepan, melt the remaining 40 g butter over medium heat. Stir in the plain flour and cook for 1 to 2 minutes until it smells biscuity but has not coloured.
  7. Gradually whisk in the milk, a little at a time, until smooth, then simmer for 3 to 5 minutes until thickened and glossy. Stir in the Dijon mustard, the remaining 1 tsp salt, the black pepper, and the zest and juice from half the lemon.
  8. Finely chop the parsley and stir most of it into the sauce, reserving a little to finish. Fold in the flaked haddock gently so it stays in chunks.
  9. Spoon the fish and sauce into a baking dish, then dollop the mash on top and spread to the edges to seal. Rough up the surface with a fork for extra golden peaks.
  10. Bake for 20 to 25 minutes until bubbling at the edges and golden on top. Rest for 10 minutes so the topping holds together, then finish with the reserved parsley and serve with lemon wedges from the remaining half.

Recipe notes

Tips

  • For a smoother mash, warm the milk before adding it to the potatoes and mash while the potatoes are still hot.
  • Keep the poaching milk below a boil so the haddock stays tender and the milk does not split.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the pie is piping hot all the way through before serving.

Substitutions

  • Replace Dijon mustard with whole-grain mustard for a milder heat and a coarser texture.
  • Replace lemon with lime for a slightly sharper citrus finish.

Storage

  • Refrigerate up to 2 days
  • Cool completely, then cover and refrigerate. Reheat in a 180°C (355°F) oven for 20 to 25 minutes until piping hot; if frozen, thaw overnight in the fridge before reheating for best texture.
