Sopa de Lima (Yucatecan Lime and Chicken Soup)

Sopa de lima is one of the defining soups of Yucatán: light, aromatic and centred on the sharp fragrance of lime rather than heavy richness. Tender shredded chicken sits in a clear savoury broth seasoned with garlic, onion and oregano, with ripe tomato adding a gentle sweetness. What makes it especially satisfying is the finish — fresh lime stirred in at the end for brightness, then crisp fried tortilla strips scattered over the hot soup for crunch. It is comforting without feeling heavy, easy enough for a weeknight, and best served with extra lime so each bowl can be sharpened to taste.

Why this recipe works

  • Clean, layered broth: Onion, garlic, oregano and chicken build a savoury base before lime zest and juice add a bright finish.
  • Crisp topping: Freshly fried tortilla strips bring crunch to the tender shredded chicken and light broth.
  • Easy to prepare ahead: The soup keeps well in the fridge or freezer, while the tortilla strips can be stored separately to preserve their texture.

Authenticity notes

  • Yucatecan style: Sopa de lima is associated with the Yucatán and is known for its clear chicken broth, citrus brightness and crisp tortilla garnish.
  • About the citrus: The dish is traditionally defined by its aromatic local citrus; regular lime gives a practical sharpness and fragrance for everyday cooking.

Ingredient notes

  • Add lime at the end: Stir in the lime zest and juice just before serving so the citrus stays lively rather than turning muted in the hot broth.
  • Use ripe tomato: A ripe tomato softens quickly and adds gentle sweetness without making the broth heavy.
  • Oregano choice: Dried oregano gives a more concentrated savoury note; fresh oregano can be added at the end for a softer herbal flavour.

Texture tips

  • Keep the chicken tender: Maintain a gentle simmer rather than a hard boil so the thighs cook evenly and shred easily.
  • Protect the tortilla crunch: Add the fried tortilla strips only at the table or just before serving so they stay crisp against the hot soup.

Make-ahead tips

  • Store the topping separately: Keep the soup and tortilla strips apart; the broth can be chilled or frozen, while the strips are best kept dry at room temperature.
  • Reheat gently: Warm the soup in a saucepan over medium heat until piping hot, then finish with fresh lime if the flavour needs lifting.

  1. Thinly slice the onion and finely chop the garlic. Stack the tortillas and cut them into thin strips. Cut the tomatoes into small dice and set aside.
  2. Heat the sunflower oil in a large frying pan over medium-high heat. Fry the tortilla strips in batches for 1 to 2 minutes, turning, until golden and crisp. Lift out with tongs and drain on kitchen paper; lightly season with a pinch of the fine sea salt.
  3. Pour off all but 1 tbsp of oil from the pan, then add the onion with a pinch of salt and cook over medium heat for 5 to 6 minutes until softened. Stir in the garlic and cook for 30 seconds until fragrant. Scrape everything into a stockpot.
  4. Add the chicken thighs and chicken stock to the stockpot and bring to a gentle simmer. Cook for 18 to 22 minutes until the chicken is cooked through and tender. Skim any foam from the surface as needed.
  5. Lift out the chicken and leave until cool enough to handle, then remove the skin and bones and shred the meat. Return the shredded chicken to the pot with the diced tomato and dried oregano. Simmer for 3 to 4 minutes until the tomato softens slightly.
  6. Finely grate the zest from 1 lime, then juice all the limes. Stir the lime zest and juice into the soup and season with the remaining fine sea salt to taste. Serve hot, topped with the crisp tortilla strips, with extra lime on the side if you like.

Recipe notes

Tips

  • Keep the soup at a gentle simmer rather than a rolling boil so the chicken stays tender and the broth stays clear.
  • Add the lime juice off the heat or at the very end so the flavour stays bright and fresh.
  • If serving anyone who is pregnant, elderly, or immunocompromised, make sure the chicken is cooked until piping hot throughout.

Substitutions

  • Replace Chicken thighs with Chicken breast for a leaner soup; simmer just until cooked through, then shred.
  • Replace Dried oregano with Fresh oregano for a softer herbal note; add it at the end with the lime.

Storage

  • Refrigerate up to 3 days
  • Cool the soup quickly, then refrigerate in a sealed container. Store the tortilla strips separately at room temperature and add at serving so they stay crisp. Reheat the soup in a saucepan over medium heat until piping hot; freeze the soup without the tortilla strips for best texture.
