Giouvetsi (Lamb and Orzo Bake in Tomato Sauce)
Why this recipe works
- Deep savoury base: Browning the lamb first creates caramelised flavour that carries through the tomato sauce.
- Pasta cooked in the sauce: The orzo finishes in the oven, absorbing stock, tomato and lamb juices rather than being cooked separately.
- Balanced finish: Feta and lemon cut through the richness of the lamb and bring brightness to the baked pasta.

Timing notes
- Mostly hands-off cooking: The active work is mainly browning the lamb and building the sauce; the rest of the time is gentle simmering and baking.
- Let it stand before serving: Resting for 10 minutes helps the orzo settle and allows the sauce to thicken slightly.
Texture tips
- Watch the orzo closely: Stir once during the uncovered bake so the pasta cooks evenly and does not catch at the edges.
- For a glossy, thick sauce: If the bake looks loose when it comes out of the oven, let it rest uncovered; the orzo will continue absorbing liquid.
- Avoid mushy pasta: Remove the dish once the orzo is tender rather than waiting for all the liquid to disappear.
Ingredient notes
- Bone-in lamb adds depth: Bone-in pieces enrich the sauce as they simmer and help give the bake a fuller, more savoury flavour.
- Use cinnamon sparingly: Ground cinnamon should sit in the background, adding warmth to the tomato sauce without dominating the lamb.
- Finish with lemon to taste: A squeeze of lemon at the end sharpens the richness and makes the feta taste brighter.
Make-ahead tips
- Reheat gently: Reheat covered at 180°C (355°F) until piping hot, adding a splash of water if the orzo has absorbed too much sauce.
- Freeze in portions: Cool completely before freezing, then defrost overnight in the fridge for more even reheating.

Ingredients
Instructions
- Heat the oven to 180°C (355°F). Pat the lamb dry and season it well with salt and black pepper. Finely chop the onion and crush the garlic.
- Heat the olive oil in a Dutch oven over medium-high heat. Brown the lamb in batches until well coloured, 6 to 8 minutes per batch, then transfer to a plate. Lower the heat to medium.
- Add the onion to the pot and cook until softened and lightly golden, about 6 minutes, scraping up any browned bits. Stir in the garlic and ground cinnamon and cook for 1 minute until fragrant. Tip in the tomatoes, add the bay leaves, and bring to a gentle simmer.
- Return the lamb to the pot and pour in the lamb stock. Bring back to a simmer, then cover and cook gently for 25 minutes so the lamb starts to tenderise and the sauce tastes rounded. Taste and adjust seasoning with salt and black pepper.
- Stir the orzo into the sauce, making sure it is mostly submerged. Cover and bake for 25 minutes, then uncover and bake for a further 10 to 15 minutes, stirring once halfway, until the orzo is tender and the top looks glossy. If it looks dry before the orzo is cooked, add a splash of hot water and stir well.
- Remove from the oven and rest for 10 minutes so the orzo settles and the sauce thickens slightly. Crumble the feta over the top. Finish with a generous squeeze of lemon and serve hot.
Recipe notes
Tips
- Brown the lamb properly: deep colour on the meat gives the sauce a richer, more savoury base.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, ensure the lamb is cooked until piping hot throughout and the dish is reheated thoroughly before serving.
Substitutions
- Replace Lamb stock with beef stock for a deeper, more robust flavour.
- Replace Feta cheese with goat cheese for a creamier, tangier finish.
- Replace Ground cinnamon with ground allspice for a warmer, peppery spice note.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Freeze in portions for up to 2 months; defrost overnight in the fridge. Reheat in a 180°C (355°F) oven, covered, for 20 to 25 minutes until piping hot, loosening with a splash of water if needed.
