Hähnchen in Rieslingsoße (Chicken Braised in Riesling)
Why this recipe works
- Built-in depth: Browning the chicken before braising leaves savoury fond in the pot, which dissolves into the Riesling and stock.
- Silky sauce: Crème fraîche is stirred in off the heat, giving the reduced wine sauce body and tang without making it heavy.
- Tender, saucy finish: Bone-in thighs stay juicy during the gentle simmer and are well suited to serving with something that absorbs the sauce.

Ingredient notes
- Choose a dry Riesling: A dry wine keeps the sauce savoury and bright; a sweeter bottle can make the finished dish taste unbalanced.
- Use crème fraîche gently: Add it after the pot comes off the heat so the sauce stays smooth rather than splitting.
- Mushroom choice matters: Cremini mushrooms bring a deeper, earthier flavour, while button mushrooms give a milder result.
Texture tips
- Brown the chicken well: Give the skin enough time in the hot pot to turn deeply golden before braising; this improves both flavour and appearance.
- Reduce before finishing: If the sauce seems loose after braising, simmer it uncovered briefly before adding the crème fraîche.
Common mistakes
- Do not boil after adding crème fraîche: High heat can make the sauce separate, so keep the final stir-in gentle and off the direct heat.
- Check the chicken is cooked through: The thighs should be tender and piping hot before serving, especially around the bone.
Make-ahead tips
- Reheat gently: Warm leftovers over low heat and loosen the sauce with a little stock if needed; avoid boiling to protect the creamy texture.
- Good for leftovers: The braise keeps well in the fridge for a few days, and the wine, mushroom and shallot flavours settle nicely.

Ingredients
Instructions
- Pat the chicken dry, then season all over with the fine sea salt and black pepper. Thinly slice the shallots, and slice the mushrooms.
- Heat the olive oil and butter in a Dutch oven over medium-high heat. Brown the chicken, skin-side down first, for 5 to 7 minutes per side until deeply golden, then transfer to a plate.
- Lower the heat to medium and add the shallots and mushrooms to the pot. Cook for 6 to 8 minutes, stirring, until the mushrooms have released their liquid and the shallots are softened.
- Pour in the Riesling and bring to a lively simmer, scraping up any browned bits. Simmer for 5 minutes to reduce slightly.
- Stir in the chicken stock and Dijon mustard, then return the chicken to the pot, skin-side up. Cover and gently simmer on low for 30 to 35 minutes, until the chicken is tender and cooked through.
- Remove the lid and simmer for 5 to 8 minutes to thicken the sauce slightly. Take the pot off the heat and stir in the crème fraiche until silky; do not let it boil.
- Finely snip the chives and scatter over the chicken. Taste the sauce and adjust with a little more salt and pepper if needed, then serve hot with plenty of sauce spooned over.
Recipe notes
Tips
- Use a dry Riesling rather than a sweet one so the sauce stays balanced and savoury.
- If the sauce looks thin after braising, simmer it uncovered for a few minutes before adding the crème fraiche.
- For food safety, make sure the chicken is cooked through and piping hot before serving.
Substitutions
- Replace Cremini mushrooms with button mushrooms for a milder flavour.
- Replace Crème fraiche with double cream for a richer, slightly less tangy sauce.
- Replace Dijon mustard with whole-grain mustard for a coarser texture.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat until piping hot, adding a splash of chicken stock if the sauce has thickened too much; avoid boiling once reheated to keep the crème fraiche smooth.
