Gołąbki (Polish Stuffed Cabbage Rolls with Tomato Sauce)
Why this recipe works
- Classic cabbage-roll method: Blanching the cabbage first makes the leaves pliable enough to roll neatly without tearing.
- Tender, savoury filling: Pork, rice, onion and paprika bake together into a soft, well-seasoned centre that suits the mild cabbage.
- Tomato sauce balance: Passata and stock keep the rolls moist while adding gentle acidity to balance the richness of the pork.

Authenticity notes
- Polish home-style cooking: Gołąbki are a homely Polish cabbage-roll dish, often made in generous batches and served with extra sauce.
- Household variations: Fillings and sauces vary between cooks, but cabbage leaves, a grain-based meat filling and gentle cooking are the recognisable core.
Ingredient notes
- Choose flexible cabbage leaves: A white cabbage with intact outer leaves gives you the best chance of rolling large, even parcels.
- Trim the thick rib: Shaving down the central rib helps each leaf fold cleanly around the filling without splitting.
- Par-cooked rice matters: Rice that is still slightly firm will finish cooking inside the roll and helps prevent a heavy, over-soft filling.
Texture tips
- For softer cabbage: If the leaves feel stiff after blanching, simmer the cabbage a little longer and peel the leaves away gradually as they soften.
- Keep the rolls compact: Arrange the rolls seam-side down in a snug single layer so they hold their shape as they bake.
- Thicken the sauce if needed: If the sauce is thinner than you like after baking, simmer it briefly in a saucepan before spooning it over the rolls.
Make-ahead tips
- Assemble ahead: The rolls can be assembled in the baking dish, covered and chilled before baking; cook until the filling is piping hot throughout.
- Freeze with sauce: Cooked gołąbki freeze well when packed with plenty of tomato sauce to protect the cabbage and filling.
- Reheat covered: Reheat covered at 180°C (355°F) until piping hot, adding a splash of extra stock or sauce if the dish looks dry.

Ingredients
Instructions
- Heat the oven to 180°C (355°F). Bring a large pot of water to the boil.
- Core the cabbage, then lower it into the boiling water. Simmer for 8 to 12 minutes, turning once, until the outer leaves are pliable; lift out and peel off 10 to 12 large leaves, then drain in a colander.
- Return the pot of water to the boil and cook the rice for 8 minutes so it is par-cooked but still a little firm. Drain well and cool for a few minutes.
- Finely chop the onion and parsley. In a mixing bowl, combine the minced pork, par-cooked rice, onion, parsley, sweet paprika and black pepper, mixing until evenly combined.
- Trim the thick rib from each cabbage leaf so it folds easily without tearing. Place a leaf on the board, add a portion of filling, then roll up tightly, folding in the sides as you go.
- Stir the tomato passata and vegetable stock together in a saucepan and warm over a medium heat for 3 to 4 minutes. Pour a thin layer of sauce into a baking dish, then nestle the rolls seam-side down in a snug single layer.
- Pour the remaining sauce over the rolls, making sure they are mostly covered. Bake for 60 minutes, until the cabbage is very tender and the filling is cooked through.
- Rest for 5 minutes, then serve hot with extra sauce spooned over the top. If the sauce looks thin, spoon some into a saucepan and simmer briefly to thicken before serving.

Tips
- If the cabbage leaves keep tearing, simmer the whole cabbage for a few minutes longer and peel the leaves off gradually as they soften.
- Pack the rolls tightly in the baking dish so they hold their shape while baking.
- For anyone who is pregnant, elderly, or immunocompromised, ensure the pork filling is cooked until piping hot all the way through.
Substitutions
- Replace long-grain white rice with basmati rice for a slightly more fragrant filling.
- Replace sweet paprika with smoked paprika for a deeper, smoky flavour.
- Replace vegetable stock with chicken stock for a richer sauce.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container with plenty of sauce. Reheat in a 180°C (355°F) oven, covered, for 20 to 25 minutes until piping hot; freeze portions with sauce for up to 2 months and defrost overnight in the fridge before reheating.
