Air Fryer Peri Peri Chicken

Peri peri chicken is all about sharp chilli heat, citrus and garlic, with smoked paprika adding depth to the punchy marinade. In this air fryer version, bone-in, skin-on chicken thighs are coated in a blended peri peri paste and cooked until the skin browns and the sauce clings in a lightly sticky glaze. The thighs stay juicy while the lemon and vinegar cut through the richness, making the dish lively rather than heavy. Serve with lemon wedges for extra brightness, alongside chips, rice, salad or grilled vegetables for an easy Portuguese-inspired dinner.

Why this recipe works

  • Bold marinade: Bird’s eye chillies bring heat, while garlic, lemon, vinegar and smoked paprika add sharpness, smoke and savoury depth.
  • Fast cooking: The air fryer browns bone-in chicken thighs efficiently without needing a grill or oven.
  • Sticky, browned coating: Cooking the thighs skin-side up helps the peri peri paste cling to the surface and caramelise lightly.

Get the most out of this recipe

Adjust the heat

  • For less heat: Use fewer bird’s eye chillies or remove some of the seeds before blending the marinade.
  • For extra fire: Add more chilli to the paste or finish the cooked chicken with a little extra peri peri sauce.
  • Keep it bright: A squeeze of lemon at the table sharpens the flavour and keeps the chilli heat from feeling heavy.

Timing notes

  • Short or long marinade: A short room-temperature marinade gives good flavour, but chilling the chicken for longer allows the chilli, garlic and lemon to penetrate more deeply.
  • Bring chilled chicken back slightly: If marinated in the fridge, let the thighs lose their fridge chill before air-frying so they cook more evenly.
  • Rest before serving: A brief rest after cooking helps the juices settle before the chicken is served.

Common mistakes

  • Avoid overcrowding: Arrange the thighs in a single layer so the air can circulate; crowded chicken steams instead of browning.
  • Watch the chilli paste: The marinade can catch once it starts to thicken, so lower the air fryer to 190°C (375°F) if the coating darkens too quickly.
  • Check the thickest part: Bone-in thighs need to be cooked through at the centre, not just browned on the outside.

Serving ideas

  • Serve with something cooling: A crisp salad, rice or chips work well alongside the smoky chilli coating.
  • Finish with lemon: Fresh lemon wedges add acidity and lift the garlic, chilli and paprika.

  1. Trim the chilli stalks, then add the chillies and peeled garlic to a blender. Finely grate the zest of 1 lemon into the blender, then squeeze in the juice of both lemons. Add the red wine vinegar, olive oil, smoked paprika, fine sea salt and black pepper, then blend to a smooth paste.
  2. Put the chicken thighs in a bowl and add the peri peri paste, turning to coat thoroughly. Cover and marinate for 25 minutes at room temperature. If you have time, marinate for up to 12 hours in the fridge, then bring back towards room temperature before cooking.
  3. Heat the air fryer to 200°C (390°F) for 3 minutes. Arrange the chicken thighs in the basket in a single layer, skin-side up, and spoon over any paste left in the bowl. Air fry for 12 minutes.
  4. Turn the thighs and air fry for 10 to 14 minutes more, until browned and cooked through with the paste lightly sticky. If your air fryer runs hot, reduce to 190°C (375°F) for the final few minutes to prevent the paste catching. Rest for 5 minutes, then serve with the remaining lemon cut into wedges for squeezing over.

Recipe notes

Tips

  • For the juiciest result, do not overcrowd the air fryer basket; cook in batches if needed so the chicken browns rather than steams.
  • If the peri peri coating looks like it is browning too quickly, lower the temperature slightly and extend the cooking time until the chicken is cooked through.

Substitutions

  • Replace Red wine vinegar with the juice of 0.5 Lemon for a brighter, more citrus-forward tang.

Storage

  • Refrigerate up to 3 days
  • Cool, then refrigerate in a sealed container for up to 3 days. Reheat in the air fryer at 180°C (355°F) for 6 to 10 minutes until piping hot; add a squeeze of lemon to refresh the flavour. Freeze in a sealed container for up to 2 months; defrost overnight in the fridge before reheating.
