Tortilla Española (Spanish Omelette)

Spain’s potato tortilla is a thick, sliceable omelette where eggs, tender potatoes and softly cooked onion come together in a compact round rather than a folded breakfast omelette. The potatoes are gently cooked in olive oil so they become mellow and silky without browning, then held in beaten egg until the mixture sets into a custardy centre with firm, neat edges. Served warm, cool or at room temperature, Tortilla Española works as a simple lunch, tapas-style plate or make-ahead dish, with its appeal coming from restrained seasoning, good olive oil and careful control of texture.

Why this recipe works

  • Gentle olive-oil cooking: Cooking the potatoes and onion slowly softens them without browning, giving the tortilla its mellow flavour and tender bite.
  • Tender centre: Letting the warm potatoes sit briefly in the beaten eggs helps the mixture bind evenly while keeping the middle soft and creamy.
  • Serve warm or room temperature: The tortilla holds its shape well, making it practical for wedges, tapas-style servings, packed lunches or simple make-ahead meals.

Authenticity notes

  • Low heat matters: The potatoes should soften in olive oil rather than crisp or brown; this gives the tortilla its classic sweet, savoury character.
  • Onion is optional in Spain: Many versions include onion for sweetness, while others leave it out for a more potato-forward tortilla.
  • Tapas-style serving: Tortilla Española is commonly cut into wedges or small squares and served warm, cool or at room temperature.

Timing notes

  • Rest before slicing: A short rest helps the centre finish setting and gives cleaner wedges.
  • Flexible serving temperature: It can be served warm or left to cool to room temperature, which makes it useful for relaxed meals and sharing boards.

Common mistakes

  • Using too much heat: High heat can brown the potatoes and toughen the eggs before the centre has set; keep the pan low and steady.
  • Flipping too early: Wait until the sides are set and the centre is only slightly soft, otherwise the tortilla may break during the turn.
  • Overcooking the centre: Remove it while the middle is just set to your liking, as it will firm up further as it rests.

Ingredient notes

  • Choose waxy or all-purpose potatoes: Yukon Gold potatoes work well because they soften without collapsing completely, giving the tortilla structure.
  • Use good olive oil: Olive oil is central to the flavour, so choose one with a clean, rounded taste rather than a harsh finish.

  1. Peel the potatoes, then slice them into thin rounds (about 2 to 3 mm). Halve and thinly slice the onion.
  2. Warm the olive oil in a frying pan over low to medium-low heat. Add the potatoes, onion and 3/4 tsp of the fine sea salt, then cook gently for 18 to 22 minutes, stirring and turning often, until the potatoes are very tender but not browned.
  3. Meanwhile, crack the eggs into a mixing bowl and whisk with the remaining salt and the black pepper until well combined. Let the eggs sit while the potatoes finish cooking.
  4. Scoop the potatoes and onion out with a spatula, letting excess oil drain back into the pan, then tip them into the eggs. Fold gently and leave for 5 minutes so the potatoes absorb some egg and the mixture cools slightly.
  5. Pour off all but about 2 tbsp of oil from the pan and set the pan over low heat. Add the egg mixture and cook for 6 to 8 minutes, shaking the pan occasionally and drawing the edges in with a spatula, until the sides are set and the centre is still a little soft.
  6. Flip the tortilla: slide it onto a plate, invert the pan over the plate, then turn both over to return the tortilla to the pan. Cook for 2 to 4 minutes more until just set to your liking, then slide onto a plate and rest for 5 minutes before slicing into wedges.

Recipe notes

Tips

  • Keep the heat low so the potatoes soften in the olive oil without taking on much colour; the tortilla should taste sweet and mellow, not fried.
  • For a classic texture, aim for a centre that is just set and still a little creamy; it will firm up as it rests.
  • If serving at room temperature, rest the tortilla for at least 15 minutes before slicing for cleaner wedges.

Substitutions

  • Replace Yukon Gold potato with new potatoes for a slightly firmer texture.
  • Replace Yellow onion with sweet onion for a milder, sweeter flavour.
  • Replace Olive oil with light olive oil for a more neutral taste while keeping the traditional method.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Serve cold or bring to room temperature; to reheat, warm slices gently in a frying pan over low heat until piping hot.
