Air Fryer Black Pepper Chicken

Black pepper chicken is a savoury, pepper-led Chinese-style stir-fry, recognised for its glossy dark sauce, tender chicken and crisp-edged vegetables. In this version, boneless chicken thighs are air-fried at 200°C (390°F) until browned and caramelised, then folded through a wok-finished sauce made with oyster sauce, light and dark soy sauce, honey and plenty of freshly ground black pepper. Red onion and green pepper bring sweetness, bite and colour, while cornflour gives the sauce its familiar cling. Served with jasmine rice, it makes a practical weeknight dinner with the flavour and texture of a good takeaway-style stir-fry.

Why this recipe works

  • Caramelised edges: Air-frying the chicken at 200°C (390°F) browns the thigh pieces before they are coated in sauce, so they keep more texture than if simmered from raw.
  • Deep savoury sauce: Light soy, dark soy and oyster sauce bring saltiness, colour and umami, while honey rounds out the sharpness of the black pepper.
  • Fast final stir-fry: The vegetables cook briefly in the wok, then the sauce thickens in minutes before the chicken is tossed through to finish.

Ingredient notes

  • Use freshly ground pepper: Black pepper is the defining flavour here, so freshly ground pepper gives a brighter, warmer finish than pre-ground pepper.
  • Choose chicken thighs: Boneless, skinless thighs stay juicy through air-frying and the final toss in the wok.
  • Dark soy adds colour: Dark soy sauce is mainly used for depth and colour, while light soy provides the saltier backbone of the sauce.

Common mistakes

  • Avoid crowding the air fryer: Give the chicken enough space for the hot air to circulate; overcrowding can make the pieces steam rather than brown.
  • Whisk the cornflour well: Cornflour should be fully mixed into the sauce before it reaches the hot wok, otherwise it can clump instead of turning glossy.
  • Do not overcook the vegetables: The onion and green pepper should stay just tender with a little bite, as they continue to soften once the sauce and chicken are added.

Make-ahead tips

  • Prep before you cook: Cut the chicken and vegetables and mix the sauce ingredients ahead, then whisk the sauce again just before cooking.
  • Reheat gently: Warm the chicken and vegetables in a wok or frying pan over a medium heat with a splash of water until piping hot; reheat the rice separately.
  • Good for leftovers: Cooked leftovers can be chilled in an airtight container for up to 3 days, though the vegetables are best when freshly stir-fried.

  1. Cook the jasmine rice according to the packet instructions and keep warm. Meanwhile, cut the chicken into bite-sized pieces.
  2. In a bowl, mix the garlic, half the black pepper, 1 tbsp of the light soy sauce and 1 tsp of the toasted sesame oil. Toss in the chicken until well coated.
  3. Air-fry the chicken at 200°C (390°F) for 12 to 14 minutes, shaking halfway, until browned and caramelised and the pieces are cooked through. Tip onto a plate and set aside.
  4. Slice the red onion and green pepper into chunky pieces. In a small bowl, whisk together the remaining light soy sauce, dark soy sauce, oyster sauce, honey, remaining black pepper and cornflour with 120 ml water until smooth.
  5. Heat the remaining toasted sesame oil in a wok over a medium-high heat. Stir-fry the onion and green pepper for 3 to 4 minutes until just tender and lightly blistered at the edges.
  6. Pour in the sauce and cook, stirring, for 1 to 2 minutes until thick and glossy. Add the chicken back in and toss for 1 minute to coat, then serve straight away with the rice.

Recipe notes

Tips

  • If your chicken is cut larger, add 2 to 3 minutes to the air-fry time and check it is piping hot throughout before saucing.
  • Whisk the cornflour into the liquid thoroughly before it hits the hot wok to avoid lumps and get a glossy finish.

Substitutions

  • Replace Honey with Maple syrup for a slightly deeper sweetness.
  • Replace Red onion with Yellow onion for a milder onion flavour.

Storage

  • Refrigerate up to 3 days
  • Cool quickly and refrigerate in an airtight container. Reheat the chicken and vegetables in a wok or frying pan over a medium heat with a splash of water until piping hot; reheat the rice separately until piping hot.
