Gevulde Speculaas (Dutch Spiced Pastry with Almond Filling)
Why this recipe works
- Tender pastry, soft centre: The chilled speculaas dough bakes into a short, buttery pastry around a moist almond filling.
- Warm spice and almond depth: Speculaas spice, brown sugar, almonds and lemon create a rounded flavour that is sweet, nutty and aromatic.
- Slices cleanly once cooled: The almond filling firms as the pastry cools, making it easy to cut into neat portions for serving or storing.

Timing notes
- Chill before rolling: The dough should be firm enough to roll without tearing; if it softens, return it to the fridge before assembling.
- Cool completely before slicing: The filling sets as it cools, so cutting too early can make the centre soft and messy.
- Serve at room temperature: If refrigerated, let the pastry lose its chill before serving for the best almond flavour and pastry texture.
Ingredient notes
- Use a fragrant speculaas blend: Speculaas spice mixes vary, but they should taste warm and aromatic rather than dusty or flat.
- Keep the butter cold: Cold butter helps the dough stay short and tender, and makes it easier to handle after chilling.
- Adjust the lemon character: Lemon juice gives the almond filling a brighter finish; for a softer, more almond-forward flavour, use zest only.
Texture tips
- Seal the edges well: Pressing the pastry edges together helps contain the almond filling and keeps the layers distinct as it bakes.
- Bake until deeply golden: A properly baked top should be fragrant and well coloured, which gives the pastry better flavour and structure.
Make-ahead tips
- Make it ahead: Gevulde speculaas keeps well, so it can be baked in advance and stored airtight until needed.
- Freeze in slices: Wrap cooled slices well and freeze; thaw at room temperature before serving.

Instructions
- In a mixing bowl, whisk together the flour, baking powder, speculaas spice mix and salt. Rub in the cold butter until the mixture looks like fine crumbs, then stir in the brown sugar. Add 1 egg and mix just until a soft dough forms.
- Shape the dough into a flat disc, cover and chill until firm enough to roll cleanly. This makes the dough easier to handle and helps the pastry keep its shape in the oven.
- Meanwhile, make the filling: mix the ground almonds with the brown sugar. Finely grate in the lemon zest, then squeeze in 1 tbsp lemon juice. Beat in 1 egg to make a thick, spreadable almond paste.
- Heat the oven to 170°C (340°F). Lightly grease a 20 cm cake tin. Divide the chilled dough into two pieces, one slightly larger than the other.
- Roll the larger piece of dough on a baking mat to a round large enough to line the base of the tin. Press it into the tin, bringing it slightly up the sides. Spread the almond paste evenly over the dough, leaving a small border clear at the edge.
- Roll the remaining dough into a round to cover the filling, then lay it on top and press the edges together to seal. Scatter over the sliced almonds and press them in lightly so they stick. Bake for 35 to 40 minutes until deep golden and fragrant.
- Cool in the tin for 15 minutes, then turn out and leave to cool completely on a rack before slicing. The filling will set as it cools, giving clean slices.
Recipe notes
Tips
- If the dough feels sticky when rolling, chill it for another 10 minutes; warm dough tears and makes sealing harder.
- For neat slices, let the pastry cool fully before cutting so the almond filling has time to firm up.
- If serving to young children, pregnant people, or anyone vulnerable, use eggs stamped with the British Lion mark or an equivalent pasteurised egg product.
Substitutions
- Replace the lemon with 1 tsp lemon zest only for a less tangy, more traditional almond-forward filling.
- Replace the sliced almonds with ground almonds for a softer top, then bake as directed.
Storage
- Refrigerate up to 5 days
- Store in an airtight container. For the best texture, keep at cool room temperature for up to 3 days, or refrigerate up to 5 days and bring to room temperature before serving. Freeze slices well wrapped for up to 2 months; thaw at room temperature.
