Baked Empanadas with Minced Beef, Olives and Egg

Golden half-moon pastries, empanadas make a natural sharing dish: crisp at the edges, tender inside and easy to eat by hand. This baked version pairs a buttery plain-flour pastry with a savoury minced beef filling seasoned with cumin, sweet paprika, garlic and onion, then folded through with green olives and chopped hard-boiled egg for briny, rich pockets of flavour. Baking gives a flaky, golden finish without frying, while the parsley, red wine vinegar and oregano dip adds the sharp, herby lift that keeps the filling from feeling heavy. Serve them warm as a relaxed dinner, party platter or make-ahead savoury bake.

Why this recipe works

  • Flaky baked pastry: Cold butter in the dough helps the pastry bake up crisp and flaky without deep-frying.
  • Savoury, balanced filling: Beef, onion, cumin and paprika provide depth, while olives and chopped egg add the briny, rich contrast associated with classic beef empanadas.
  • Bright dipping sauce: The parsley and red wine vinegar dip cuts through the richness of the pastry and beef, keeping each bite lively.

Timing notes

  • Chill the pastry: Resting the dough before rolling makes it easier to handle and helps keep the butter firm for a flakier bake.
  • Cool the filling before shaping: A hot beef filling can soften the pastry and make sealing difficult, so let it cool before adding the olives and egg.
  • Rest briefly after baking: A short rest allows the filling to settle, making the empanadas easier to serve while still warm.

Texture tips

  • Keep the dough cool: If the pastry becomes soft while shaping, pause and chill it briefly so the edges seal cleanly and the crust bakes crisp.
  • Cook off excess moisture: Brown the beef until any liquid has evaporated; a dry, well-seasoned filling gives the pastry a better finish.
  • Handle the pastry lightly: Mix the dough only until it comes together to avoid a tough texture after baking.

Make-ahead tips

  • Make the filling in advance: The beef filling can be cooked ahead and chilled, then brought closer to room temperature before assembling.
  • Freeze baked empanadas: Cool them completely before freezing, then reheat from frozen at 180°C (355°F) until piping hot.
  • Reheat on a tray: Use the oven rather than a microwave to help restore the pastry’s crispness.

Ingredient notes

  • Use cold butter for the pastry: Cold butter creates small pockets in the dough, which helps the baked empanadas turn flaky rather than dense.
  • Adjust the dip to taste: Red wine vinegar gives the herb dip a sharper finish; white wine vinegar makes it slightly softer.
  • Control the warmth: Sweet paprika keeps the filling gentle, while hot paprika or chilli flakes can add more heat if preferred.

  1. Make the pastry: put the plain flour and fine sea salt in a bowl, then rub in the cold unsalted butter until it looks like coarse crumbs with a few pea-sized bits. Add the cold water and mix just until a dough forms. Shape into a disc and chill for 30 minutes.
  2. Hard-boil 4 eggs: cover them with water in a saucepan, bring to the boil, then simmer for 10 minutes. Drain, cool under cold running water, then peel and chop. Set aside.
  3. Make the filling: heat the olive oil in a frying pan over medium heat. Finely chop the yellow onion, then cook with a pinch of fine sea salt for 8 to 10 minutes until soft and lightly golden. Crush in 2 garlic cloves and cook for 1 minute.
  4. Add the minced beef and cook over medium-high heat, breaking it up, until browned and any liquid has cooked off. Stir in the ground cumin, sweet paprika and black pepper, then cook for 1 minute until fragrant. Take off the heat and leave to cool for 10 minutes so it does not melt the pastry.
  5. Roughly chop the green pitted olives and stir them into the cooled beef mixture with the chopped hard-boiled eggs. Taste and add a little more fine sea salt if needed. Keep the filling at room temperature while you roll the pastry.
  6. Heat the oven to 200°C (390°F) and line a baking tray. On a lightly floured surface, roll the pastry to about 2 to 3 mm thick. Cut out 12 circles about 12 cm wide, re-rolling the offcuts as needed.
  7. Spoon filling onto one half of each circle, leaving a clear border, then fold over to make half-moons. Press the edges to seal, then crimp with a fork. Arrange on the tray.
  8. Beat the remaining egg and brush it over the empanadas. Bake for 20 to 25 minutes until deep golden and crisp. Rest for 5 minutes before serving warm.
  9. Make the chimichurri-style dip: finely chop the fresh parsley and crush the garlic clove. Stir together with the red wine vinegar, olive oil, dried oregano, fine sea salt and chili flakes if using. Serve alongside the empanadas for dipping.

Recipe notes

Tips

  • For neat sealing, keep the pastry cool and avoid overfilling; if the edges feel dry, lightly dampen them with a fingertip dipped in water before crimping.
  • Let the beef filling cool before assembling so the butter in the pastry stays firm, which helps the empanadas bake up flaky.
  • Egg safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs stamped with the British Lion mark.

Substitutions

  • Replace red wine vinegar with white wine vinegar for a slightly softer acidity in the chimichurri-style dip.
  • Replace sweet paprika with hot paprika for a spicier filling.
  • Replace fresh parsley with fresh coriander for a different, brighter herb note in the dip.

Storage

  • Refrigerate up to 3 days
  • Cool empanadas completely, then refrigerate in a sealed container for up to 3 days. Reheat on a baking tray at 180°C (355°F) for 10 to 12 minutes until piping hot. Freeze baked empanadas for up to 2 months and reheat from frozen at 180°C (355°F) for 18 to 22 minutes.
