Caldeirada de Peixe (Portuguese Fish Stew with Potatoes)

In Portuguese cooking, caldeirada de peixe is a generous fish stew where potatoes, onions and tomatoes form the base for tender seafood and a light, savoury broth. Rather than a thick, heavy stew, it is gently simmered in layers so the potatoes absorb the wine, olive oil, garlic and bay while the fish stays intact. This version uses skinless white fish with prawns, finished with fresh coriander for a bright herbal lift. It is the kind of one-pot dinner that feels substantial without being rich, best served hot in bowls with plenty of broth spooned over the seafood and potatoes.

Why this recipe works

  • Layered flavour: Cooking the potatoes, tomatoes, onion, garlic and bay together first gives the broth depth before the delicate seafood is added.
  • Gentle layered cooking: The ingredients are stacked and simmered softly, helping the potatoes absorb flavour while keeping the stew clear and well defined.
  • Light but satisfying: Potatoes make the stew filling, while white fish, prawns, herbs and wine keep the broth fresh rather than rich.

Timing notes

  • Serve straight away: Caldeirada is at its best just after cooking, when the fish is tender, the prawns are juicy and the broth is still clear.
  • Prepare before you start: Slice the vegetables and cut the fish before heating the pot; once the potatoes are tender, the seafood cooks quickly.

Ingredient notes

  • Choose firm white fish: Use a firm, skinless white fish that can hold its shape in a stew rather than breaking apart as soon as it is simmered.
  • Use ripe tomatoes: Ripe tomatoes bring natural sweetness and acidity to the broth; underripe tomatoes can make the stew taste flat.
  • Fresh herbs finish the dish: Fresh coriander gives a bright finish, while flat-leaf parsley is a milder alternative that also suits the Portuguese style.

Common mistakes

  • Do not boil hard: A vigorous boil can break up the fish and make the broth cloudy; keep the stew at a gentle simmer.
  • Add seafood late: Fish and prawns only need a short cook once the potatoes are tender, so add them near the end to avoid a dry or rubbery result.
  • Avoid too much stirring: Shake the pot gently if needed instead of stirring repeatedly, which can disturb the layers and break the fish.

Dietary alternatives

  • Alcohol-free option: Replace the white wine with water and adjust the seasoning to keep the broth lively.

  1. Prepare the vegetables: thinly slice the onion, slice the garlic, and cut the tomatoes into wedges. Scrub the new potatoes and slice them into 5 mm rounds. Cut the white fish into large chunks so it stays intact in the stew.
  2. Warm the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook for 6 to 8 minutes until softened and sweet, stirring occasionally. Stir in the garlic for 1 minute until fragrant.
  3. Layer in half the potatoes, then half the tomatoes, seasoning with a pinch of the salt and pepper. Repeat with the remaining potatoes and tomatoes, then tuck in the bay leaves. Pour in the white wine and 250 ml water, then bring to a gentle simmer.
  4. Cover and simmer on low for 18 to 22 minutes, shaking the pot gently once or twice, until the potatoes are just tender. Taste the broth and adjust with the remaining salt and pepper. Keep the simmer gentle so the layers stay defined.
  5. Nestle the fish into the potatoes and tomatoes, then scatter over the prawns. Cover and cook for 5 to 7 minutes until the fish is opaque and flakes easily, and the prawns are pink and just cooked through. Remove from the heat and rest for 2 minutes.
  6. Roughly chop the fresh coriander and stir most of it through the stew. Ladle into bowls, spooning over plenty of the light broth, and finish with the remaining coriander. Serve straight away while hot.

Recipe notes

Tips

  • Keep the heat low and the simmer gentle; vigorous boiling will break up the fish and cloud the broth.
  • If your fish pieces are thin, add them 2 minutes after the potatoes are tender, then add the prawns for the final few minutes so everything finishes together.

Substitutions

  • Replace Dry White Wine with the same amount of water for an alcohol-free version; season a little more with Fine sea salt and Black pepper to keep the broth lively.
  • Replace Fresh coriander with the same amount of Fresh flat-leaf parsley for a milder, more classic herb finish.

Storage

  • Refrigerate up to 2 days
  • Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat until piping hot; avoid boiling to keep the fish tender.
