Phirni (Chilled Rice Pudding with Saffron)
Why this recipe works
- Creamy set texture: Finely ground basmati rice thickens the milk gently, giving phirni its signature spoonable consistency without eggs or cream.
- Delicate aromatics: Cardamom, saffron and rose water add fragrance in layers, keeping the pudding elegant rather than heavy.
- Ideal for preparing ahead: Chilling is part of the method, so the dessert can be made in advance and finished with nuts just before serving.

Timing notes
- Allow time to set: The phirni needs at least an hour in the fridge to firm up and develop its chilled, spoonable texture.
- Cool before chilling: Let the pudding cool briefly before refrigerating so it sets evenly and does not create excess condensation.
Texture tips
- Grind the rice finely: Aim for a fine, sandy texture rather than flour; this helps the pudding thicken smoothly while retaining the classic phirni body.
- Cook out the rice fully: Simmer until the rice no longer tastes chalky, stirring often so the mixture thickens without catching on the pan.
- Adjust after chilling: If the chilled phirni becomes too firm, whisk it briefly before serving to loosen the texture.
Ingredient notes
- Use basmati rice: Basmati brings a gentle aroma and works well when ground, giving the pudding a clean rice flavour.
- Use saffron sparingly: Good saffron adds colour and fragrance without needing much; crushing the threads helps them release into the warm milk.
- Balance the sweetness: Taste after the sugar has dissolved and adjust only if needed, as chilling can make sweetness feel slightly softer.
Make-ahead tips
- Make it in advance: Phirni keeps well covered in the fridge for up to 3 days, making it suitable for preparing before a meal or gathering.
- Add nuts at the end: Keep the pistachios and almonds separate until serving so they stay crisp against the creamy pudding.

Instructions
- Rinse the basmati rice in a bowl of cold water, then drain well. Spread it on a plate and leave to air-dry for 10 minutes so it grinds more evenly.
- Crack open the green cardamom pods and tip the seeds into a spice grinder. Add the dried rice and grind to a fine, sandy powder; it should feel like semolina rather than flour.
- Pour the whole milk into a saucepan and bring to a gentle simmer over medium heat, stirring occasionally so it does not catch. Crush the dried saffron threads between your fingers and stir them into the milk.
- Whisk in the ground rice and cardamom in a steady stream. Reduce the heat to low and cook, stirring often, for 20 to 25 minutes until thick and creamy and the rice tastes cooked, not chalky.
- Stir in the granulated sugar and cook for 3 to 5 minutes until fully dissolved and the phirni is glossy. Take off the heat and stir in the rose water.
- Divide the phirni between 4 small bowls or glasses. Let it cool for 20 minutes, then chill for at least 1 hour until set and cold.
- Just before serving, roughly chop the pistachios and slivered almonds. Sprinkle over the chilled phirni and serve straight from the fridge.
Recipe notes
Tips
- Keep the milk at a gentle simmer and stir regularly, especially around the edges of the pan, to prevent scorching and lumps.
- For the smoothest texture, grind the rice finely and whisk it into the hot milk gradually rather than tipping it in all at once.
- If serving to young children or anyone with swallowing difficulties, chop the pistachios and slivered almonds very finely or leave the topping off.
Substitutions
- Replace Rose Water with 0.5 tsp vanilla extract for a different, softer aroma.
- Replace Pistachios with extra Slivered almonds for a simpler nut topping.
Storage
- Refrigerate up to 3 days
- Cover and refrigerate for up to 3 days. Serve chilled; if it thickens too much, whisk briefly to loosen before portioning.
