Bibim Guksu (Spicy Mixed Noodles)

Bibim guksu is a cold Korean mixed-noodle dish, valued for its quick preparation and punchy seasoning rather than a heavy broth. Thin wheat noodles are cooked until just tender, rinsed thoroughly so they stay springy and clean-tasting, then tossed in a glossy gochujang dressing with soy sauce, rice vinegar, garlic, sugar and sesame oil. The result is spicy, sweet, tangy and nutty, with cucumber and spring onion adding crispness against the chilled noodles. It is best served straight away, making it a practical lunch or light meal when you want something bold, refreshing and fast.

Why this recipe works

  • Balanced dressing: Gochujang brings heat and savoury depth, while rice vinegar, sugar and sesame oil keep the sauce sharp, sweet and rounded.
  • Cold, springy noodles: Rinsing the cooked noodles removes surface starch and chills them quickly, giving the finished dish a clean, bouncy texture.
  • Fast assembly: The sauce is whisked cold and the vegetables need only slicing, so the dish comes together as soon as the noodles are cooked and cooled.

Adjust the heat

  • For a milder bowl: Start with less gochujang, taste the dressing, then add more only if you want extra heat.
  • For more heat: Increase the gochujang gradually and keep the vinegar and sesame oil in balance so the sauce stays glossy rather than harsh.
  • Keep the flavour balanced: If the sauce tastes too fiery, soften it with a little more sweetness or sesame oil rather than diluting it with water.

Timing notes

  • Serve straight after tossing: Bibim guksu is at its best when the noodles are cold, lightly chewy and freshly coated in the dressing.
  • Best eaten fresh: The noodles continue absorbing sauce as they sit, so the texture becomes softer after refrigeration.

Texture tips

  • Drain very well: Excess water from rinsing will loosen the dressing and make it harder for the sauce to cling to the noodles.
  • Cook just until tender: Thin somen noodles soften quickly, so avoid overcooking before rinsing them cold.

Ingredient notes

  • Use firm cucumber: A crisp cucumber adds freshness and keeps the dish from feeling too heavy or sauce-dense.
  • Gochujang sets the tone: Different gochujang brands vary in sweetness, saltiness and heat, so taste the dressing before adding the noodles.

  1. Bring a large pot of water to the boil. Cook the somen noodles according to the packet instructions until just tender. Drain in a colander.
  2. Rinse the noodles under cold running water, rubbing them gently with your hands to remove excess starch. Keep rinsing until the noodles are fully chilled, then drain very well. Set aside while you make the dressing.
  3. In a mixing bowl, whisk together the gochujang, light soy sauce, rice vinegar, caster sugar and sesame oil. Finely grate the garlic into the bowl and whisk again until smooth and glossy.
  4. Julienne the cucumber into thin matchsticks. Thinly slice the spring onion.
  5. Add the drained noodles, cucumber and spring onion to the bowl with the dressing. Toss thoroughly until every strand is evenly coated. Sprinkle over the roasted sesame seeds and toss once more.
  6. Divide between two bowls and serve straight away while cold. If the noodles sit for a few minutes, toss again to loosen before serving.

Recipe notes

Tips

  • Drain the noodles extremely well after rinsing so the dressing clings properly rather than turning watery.
  • For the best texture, cook the somen noodles until just tender, then chill quickly under cold running water.
  • If serving to anyone who is sensitive to spice, start with half the gochujang, taste the dressing, then add the rest as needed.

Substitutions

  • Replace caster sugar with honey for a rounder sweetness.
  • Replace rice vinegar with white-wine vinegar for a slightly sharper tang.
  • Replace light soy sauce with dark soy sauce for a deeper colour and a slightly richer flavour.

Storage

  • Refrigerate up to 1 days
  • Best eaten fresh. If storing, keep covered in the fridge and toss well before serving; the noodles will absorb dressing and soften slightly.
