Jjamppong (Spicy Seafood Noodle Soup)
Why this recipe works
- Chilli depth: Blooming gochugaru and gochujang in oil before adding liquid gives the broth a fuller, more rounded chilli flavour.
- Balanced richness: Soy sauce, seafood juices and sweet vegetables create a savoury broth that keeps the chilli heat from tasting one-dimensional.
- Seafood added in stages: Mussels go in first, followed by squid and prawns, so each seafood element cooks properly without turning tough.

Adjust the heat
- For a gentler broth: Reduce the gochugaru and use a little less gochujang, then adjust with soy sauce and sesame oil for savoury depth.
- For more heat: Increase the gochugaru slightly or add a small amount of extra chilli paste while blooming the aromatics.
- Keep the flavour rounded: Avoid adding chilli only at the end; cooking it briefly in oil helps the heat blend into the broth rather than sitting harshly on top.
Timing notes
- Serve straight away: Jjamppong is at its best as soon as the broth is ladled over the noodles, before they soften too much.
- Prep before heating: Slice the vegetables and seafood before starting, as the soup moves quickly once the chilli paste and broth are cooking.
Texture tips
- Keep squid tender: Simmer squid gently and briefly; once it turns opaque, it is ready.
- Watch the prawns: Remove the soup from the heat once the prawns are pink and just cooked through, as they continue to firm up in the hot broth.
Make-ahead tips
- Store noodles apart: If making leftovers, refrigerate the broth and noodles separately so the noodles do not absorb too much liquid.
- Reheat thoroughly: Warm the broth in a saucepan until piping hot, then refresh the noodles briefly in boiling water before assembling.

Instructions
- Prepare the vegetables: thinly slice the onion, finely slice the garlic, shred the napa cabbage, and cut the courgette into thin matchsticks. Slice the spring onions and set them aside for finishing.
- Heat the vegetable oil in a wok over medium heat. Add the onion and cook for 4 to 5 minutes until softened, then stir in the garlic for 30 seconds until fragrant.
- Add the gochugaru and gochujang and stir for 1 minute to bloom the chilli and coat the onions. Tip in the napa cabbage and courgette and cook for 3 to 4 minutes until starting to soften.
- Pour in the water and bring to a lively simmer. Stir in the soy sauce, fine sea salt and black pepper, then simmer for 10 minutes so the broth turns rich and chilli-scented.
- Add the mussels, cover, and cook for 4 to 6 minutes, shaking the pan once or twice, until the shells open. Discard any mussels that do not open.
- Stir in the squid and prawns and simmer gently for 2 to 3 minutes until the prawns are pink and the squid is just opaque and tender. Take the broth off the heat and stir in the toasted sesame oil.
- Meanwhile, bring a large pot of water to the boil and cook the wheat noodles according to the packet instructions until just tender. Drain well in a colander.
- Divide the noodles between bowls and ladle over the hot seafood broth, making sure each bowl gets a mix of seafood and vegetables. Finish with the spring onion and serve straight away.
Recipe notes
Tips
- Keep the simmer gentle once the squid and prawns go in; overcooking can make the squid rubbery.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the prawns and squid are cooked through and the soup is piping hot.
Substitutions
- Replace Stir-fry wheat noodle with Udon noodles for a thicker, chewier bowl.
- Replace Korean chili flakes gochugaru with Aleppo pepper for a milder heat and slightly fruitier flavour.
- Replace Gochujang with Doubanjiang chili bean paste for a sharper, saltier chilli depth.
Storage
- Refrigerate up to 2 days
- Cool quickly and refrigerate in an airtight container. Store noodles separately if possible; reheat the broth in a saucepan until piping hot, then warm the noodles briefly in boiling water and assemble.
