Pan de Muerto (Orange-Scented Sweet Bread)
Why this recipe works
- Fragrant citrus flavour: Orange zest, orange blossom water and cinnamon give the enriched dough its distinctive floral, gently spiced aroma.
- Recognisable shaping: The criss-crossed bone decorations and top knot create the classic pan de muerto appearance before baking.
- Soft crumb, sugared crust: Butter and eggs keep the loaf tender, while the warm butter-and-sugar finish adds a delicate sweet crust.

Timing notes
- Allow time for two rises: The first rise develops the dough structure, while the second rise after shaping helps the loaf bake up light rather than dense.
- Cool before slicing: Let the bread cool after the butter and sugar coating so the crumb sets cleanly and does not compress under the knife.
Texture tips
- Add the butter gradually: Work in the softened butter a little at a time so it emulsifies into the dough and creates a smooth, elastic texture.
- Protect the crust if needed: If the loaf colours too quickly, cover it loosely with foil near the end of baking so the centre can finish without the crust over-browning.
Authenticity notes
- Día de los Muertos bread: Pan de muerto is closely associated with Día de los Muertos and is commonly shaped with dough pieces representing bones.
- Traditional serving style: Serve in slices with coffee, Mexican hot chocolate or another warm drink to balance the sweet, buttery crust.
Make-ahead tips
- Freeze in slices: Once cooled, slice and wrap well before freezing; individual slices defrost more quickly and are easier to refresh.
- Refresh gently: Warm defrosted slices in a 160°C (320°F) oven until soft and fragrant again.

Instructions
- Put the warm milk in a bowl (or the bowl of a stand mixer) and stir in the yeast and 1 tbsp of the caster sugar. Leave for 5 to 10 minutes until foamy on top. If it does not foam, start again with fresher yeast.
- Add the flour, salt, cinnamon, dried orange zest and the remaining caster sugar, then mix to combine. Add the orange blossom water and eggs and mix until a shaggy dough forms. Scrape down the bowl as needed so everything is evenly incorporated.
- Knead on medium speed for 6 to 8 minutes until the dough is smooth and elastic. With the mixer running, add the softened butter a little at a time, letting each addition disappear before adding more. Continue kneading for 5 to 7 minutes until the dough is glossy and pulls away from the sides of the bowl.
- Shape the dough into a ball and place it in a lightly buttered bowl, turning once to coat. Cover and leave in a warm place until doubled in size. This usually takes 60 to 90 minutes depending on room temperature.
- Tip the dough onto a clean work surface and gently press out the air. Pinch off about a quarter of the dough and set it aside for the decorations. Shape the remaining dough into a tight round and place it on a baking tray.
- Divide the reserved dough into 5 pieces: 1 small ball for the top and 4 equal pieces for the “bones”. Roll each bone piece into a rope, then press with two fingers at intervals to create knobbly sections; lay them in a criss-cross on the loaf. Press the small ball on top where the bones meet, then cover loosely and prove until puffy and nearly doubled, 45 to 60 minutes.
- Heat the oven to 180°C (355°F). Bake for 25 to 30 minutes until deep golden and the loaf sounds hollow when tapped underneath. If it is browning too quickly, loosely cover with a piece of foil for the last 10 minutes.
- Cool on the tray for 10 minutes, then brush all over with the melted butter while still warm. Sprinkle and press on the caster sugar so it coats the surface well. Leave to cool before slicing so the crumb sets.
Recipe notes
Tips
- For the best rise, keep the dough somewhere warm but not hot; a switched-off oven with the light on works well.
- If the dough feels very sticky after the butter is fully incorporated, knead for a few more minutes; it should become smooth and only slightly tacky.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs with a safety mark and bake the loaf until fully cooked through.
Substitutions
- Replace Orange Blossom Water with the same amount of vanilla-extract for a different but still classic sweet-bread aroma.
- Replace Ground cinnamon with an equal amount of ground-cardamom for a more floral spice note.
Storage
- Refrigerate up to 3 days
- Store airtight at room temperature for up to 2 days, or in the fridge for up to 3 days. Freeze slices well wrapped for up to 2 months; defrost at room temperature, then warm in a 160°C (320°F) oven for 8 to 10 minutes to refresh.
