Börek Assortment (Spinach and Feta Filled Filo Pastries)
Why this recipe works
- Crisp top, tender layers: The yoghurt, egg and olive oil mixture softens the inner filo while encouraging a deeply golden, flaky surface.
- Balanced filling: Salty feta is softened by spinach and fresh parsley, giving the filling a savoury but fresh flavour.
- Easy to share: Scoring before baking creates neat portions, making the börek simple to slice for a spread or buffet.

Ingredient notes
- Drain the spinach well: Excess moisture in the spinach can soften the pastry, so squeeze it firmly before mixing with the feta.
- Use fresh herbs where possible: Fresh parsley gives a cleaner, brighter flavour than dried herbs in this style of filling.
- Handle filo gently: Keep the sheets covered while assembling so they stay flexible and do not crack before layering.
Texture tips
- Brush the top with oil: A final layer of olive oil helps the surface bake to a stronger golden colour and a crisper finish.
- Bake until the centre is hot: The börek should be crisp on top and hot through the middle before resting, so the layers set properly.
Make-ahead tips
- Reheat in the oven: Warm leftovers on a baking tray at 180°C (355°F) until piping hot and crisp again.
- Freeze portions: Cool completely, freeze in portions, then reheat from frozen at 180°C (355°F) until hot through.
- Best texture on the day: The pastry is at its flakiest soon after baking, though it still reheats well.
Authenticity notes
- Classic filling style: Spinach and white cheese is one of the familiar savoury börek fillings, often varied with herbs such as parsley or dill.
- Served for sharing: Tray-baked börek is commonly cut into squares or rectangles and served warm or at room temperature.

Instructions
- Heat the oven to 190°C (375°F). Lightly oil a baking dish (about 23 x 33 cm) with a little of the olive oil.
- Whisk the greek yogurt, egg, most of the olive oil (reserve about 1 tbsp for the top), fine sea salt and black pepper until smooth. This is your brushing mixture for layering the pastry.
- Put the spinach in a bowl and squeeze it firmly to remove excess moisture, then separate it with your fingers. Finely chop the fresh parsley, crumble the feta cheese, and mix all three together; taste and adjust with a pinch more fine sea salt and black pepper if needed.
- Lay a sheet of phyllo dough in the dish, letting the edges overhang, then brush lightly with the yoghurt mixture. Repeat with 5 to 6 sheets, brushing each one, to create a base.
- Spread over half the spinach and feta filling in an even layer. Add 3 to 4 more sheets of phyllo dough, brushing each with the yoghurt mixture, then add the remaining filling.
- Finish with the remaining phyllo dough sheets, brushing each with the yoghurt mixture. Fold the overhanging pastry in neatly, then brush the top with the reserved olive oil for extra colour.
- Using a sharp knife, score the top into portions without cutting all the way through to the base. Bake for 30 to 35 minutes until deeply golden and crisp, and the centre feels hot when a knife is inserted.
- Rest for 10 minutes so the layers settle, then cut through fully and serve warm or at room temperature. It is ideal sliced for sharing as part of a spread.
Recipe notes
Tips
- Keep the phyllo dough covered with a barely damp cloth while you work so it does not dry out and crack.
- Squeezing the spinach well is key; excess moisture will make the pastry soft rather than crisp.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs that are stamped as suitable for eating raw or lightly cooked, and bake until the centre is piping hot.
Substitutions
- Replace feta cheese with goat-cheese for a tangier, creamier filling.
- Replace fresh parsley with fresh-dill for a more aromatic, classic variation.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat on a baking tray in a 180°C (355°F) oven for 10 to 15 minutes until piping hot and crisp; freeze portions for up to 2 months and reheat from frozen at the same temperature for 20 to 25 minutes.
