Jerk Chicken Bowl

A jerk chicken bowl brings the punchy, aromatic character of Caribbean-style jerk seasoning into an easy grain-bowl format. Here, browned chicken thighs sit over fluffy basmati rice and black beans, with a mango, red onion and spring onion salsa for sweetness, acidity and crunch. Lime sharpens the spices, while fresh coriander keeps the finish bright rather than heavy. It is filling enough for lunch or a simple dinner, and the separate rice, beans, chicken and salsa make it practical for make-ahead portions without losing the fresh contrast that defines the bowl.

Why this recipe works

  • Big spice, simple method: Jerk seasoning gives the chicken deep, aromatic flavour without needing a long marinade.
  • Fresh contrast: Juicy mango salsa cuts through the warm spices and adds brightness to the rice and beans.
  • Easy to portion: Rice, beans and chicken can be stored separately, then finished with fresh salsa and lime when serving.

Adjust the heat

  • For a gentler bowl: Use a mild jerk seasoning or reduce the amount slightly, then lean on extra lime and coriander for flavour.
  • For more heat: Choose a hotter jerk blend or add a little fresh chilli to the mango salsa.
  • Keep the heat balanced: Serve with plenty of mango salsa so the sweetness and acidity soften the spice.

Ingredient notes

  • Jerk seasoning varies: Blends can range from gently aromatic to very hot, so taste or check the label before seasoning generously.
  • Choose the right mango: A ripe but firm mango gives sweetness while holding its shape in the salsa.
  • Use lime to finish: A final squeeze of lime sharpens the bowl and helps the beans, rice and chicken taste more defined.

Common mistakes

  • Avoid steaming the chicken: Give the chicken space in the pan so it browns properly instead of releasing too much moisture.
  • Do not skip the rice steaming time: Leaving the rice covered off the heat helps the grains finish cooking and stay fluffy.
  • Rest before slicing: A short rest keeps the chicken juicier and makes it easier to slice cleanly for the bowl.

Make-ahead tips

  • Keep the components separate: Store the rice, beans, chicken and salsa in separate containers so the salsa stays fresh and the rice does not turn wet.
  • Reheat gently: Warm the rice, beans and chicken with a splash of water until piping hot, then add the salsa, lime and coriander after reheating.
  • Good for lunches: Portion the cooked rice, beans and chicken ahead, then add the mango salsa just before eating for the best texture.

  1. Rinse the basmati rice in cold water until the water runs mostly clear. Tip into a saucepan with the water and fine sea salt, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Take off the heat and leave, covered, for 10 minutes to steam.
  2. Drain and rinse the canned black beans in a colander. Put them back into the saucepan (off the heat is fine) with a pinch of fine sea salt and a splash of water, then cover to keep warm. If they cool down, warm gently for 2 to 3 minutes until hot.
  3. Pat the chicken dry, then toss with the jerk seasoning, black pepper, 1 tbsp olive oil, and the garlic (finely grated or crushed). Leave to sit while you make the salsa. Wash your hands and any boards/knives after handling raw chicken.
  4. Dice the mango, finely chop the red onion, and thinly slice the spring onion. Put into a mixing bowl, squeeze in half the lime, and add a small pinch of fine sea salt. Roughly chop most of the fresh coriander and stir it through, reserving a little to finish.
  5. Heat the remaining 1 tbsp olive oil in a frying pan over medium-high heat. Add the chicken and cook for 5 to 7 minutes, turning once or twice, until deeply browned and cooked through. Rest on a plate for 2 minutes, then slice.
  6. Fluff the rice with a fork and divide between two bowls. Spoon over the black beans, top with the sliced jerk chicken, and add the mango salsa. Squeeze over the remaining lime and finish with the reserved fresh coriander.

Recipe notes

Tips

  • For the juiciest chicken, avoid overcrowding the pan; cook in two batches if needed so it browns rather than steams.
  • If you are cooking for anyone vulnerable (young children, older adults, or pregnant people), make sure the chicken is cooked until piping hot all the way through with no pink remaining.

Substitutions

  • Replace basmati rice with jasmine rice for a slightly stickier, more fragrant base.
  • Replace jerk seasoning with curry powder for a milder, warmer spice profile.

Storage

  • Refrigerate up to 3 days
  • Store rice, beans, chicken, and salsa in separate airtight containers for best texture. Reheat rice, beans, and chicken in a microwave or a frying pan with a splash of water until piping hot; add the salsa, lime, and fresh coriander after reheating.
