Pollo alla Cacciatora (Italian Chicken Braised with Tomatoes and Mushrooms)

Pollo alla cacciatora is the Italian “hunter-style” chicken braise known for its rustic tomato sauce, savoury depth and relaxed, one-pot character. Bone-in chicken thighs simmer gently with red wine, mushrooms, onion, garlic and rosemary, giving the sauce body while keeping the meat tender and juicy. The mushrooms add earthiness, the tomatoes bring acidity, and a final scattering of parsley keeps the dish fresh rather than heavy. Serve it with crusty bread, polenta, mashed potatoes or pasta to catch the sauce; it is equally suited to a weekend meal or a practical make-ahead dinner.

Why this recipe works

  • Layered savoury flavour: Softened onion, browned mushrooms, garlic, rosemary and wine create a deep base before the tomatoes are added.
  • Gentle braising: Bone-in, skin-on thighs stay moist as they simmer slowly in the tomato-wine sauce.
  • Rich but balanced: Tomatoes and dry wine cut through the richness of the chicken, keeping the sauce bright as well as savoury.

Authenticity notes

  • Hunter-style cooking: Cacciatora refers to an Italian hunter-style braise, usually built from meat, aromatics, wine and herbs.
  • Regional flexibility: Recipes vary across Italy and from kitchen to kitchen; red wine, white wine, tomato and mushrooms are all common variations.
  • Sauce-led serving: This is a home-style dish designed to be served with something that absorbs the braising sauce.

Common mistakes

  • Boiling too hard: Keep the sauce at a gentle simmer once the tomatoes are added; a hard boil can toughen the chicken and make the sauce catch.
  • Rushing the reduction: If the sauce is too loose, uncover the pot near the end and reduce it gradually rather than increasing the heat sharply.
  • Cooking past tender: Chicken thighs are forgiving, but they should be simmered only until tender, cooked through and piping hot.

Make-ahead tips

  • Good for making ahead: The braise reheats well, and the tomato, wine and herb flavours settle nicely after chilling.
  • Reheat gently: Warm in a covered pan over low heat until piping hot, adding a little water if the sauce has thickened too much.
  • Freezer-friendly: Cool completely before freezing, then defrost overnight in the fridge before reheating.

Serving ideas

  • Best sides: Serve with soft polenta, pasta, mashed potatoes or crusty bread to soak up the sauce.
  • Finish fresh: A final scattering of parsley lifts the rich braise with a clean herbal note.
  • Wine pairing: A medium-bodied Italian red or a dry white works well with the tomato, mushroom and herb flavours.

  1. Finely slice the onion, slice the mushrooms, and thinly slice the garlic. Strip the rosemary leaves from the sprigs and roughly chop them. Roughly chop the parsley and set it aside for the end.
  2. Heat the olive oil in a Dutch oven over medium heat. Add the onion and cook for 6 to 8 minutes until softened and lightly golden. Stir in the mushrooms and cook for 5 minutes until they start to colour and their liquid has mostly evaporated.
  3. Add the garlic and rosemary and cook for 1 minute until fragrant. Nestle in the chicken thighs skin-side down and cook for 4 to 5 minutes until the skin is golden, then turn and cook for 2 minutes on the other side. If the pot looks dry, reduce the heat slightly rather than adding more oil.
  4. Pour in the red wine and bring to a lively simmer, scraping up any browned bits from the base. Simmer for 3 to 4 minutes to reduce slightly. Tip in the canned tomatoes and bring back to a gentle simmer.
  5. Cover and simmer on low for 25 to 30 minutes, turning the chicken once halfway through, until the meat is tender and cooked through. Uncover for the last 5 minutes if you want a thicker sauce. Taste and adjust by simmering a little longer if the sauce needs more reduction.
  6. Stir in most of the parsley and simmer for 1 minute. Rest off the heat for 5 minutes so the sauce settles. Serve with the remaining parsley scattered over the top.

Recipe notes

Tips

  • Keep the simmer gentle so the chicken stays juicy and the sauce reduces without catching on the base of the pot.
  • If using very large mushrooms, slice them a little thicker so they keep their shape during the braise.
  • Food safety: make sure the chicken is cooked through and piping hot before serving.

Substitutions

  • Replace Red wine with dry white wine for a lighter, brighter sauce.
  • Replace Chicken thighs with chicken drumsticks, keeping the simmer time similar and cooking until tender.
  • Replace Fresh rosemary with fresh thyme for a softer herbal note.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat gently in a covered pan over low heat until piping hot, adding a splash of water if the sauce has thickened too much. Freeze for up to 3 months and defrost overnight in the fridge before reheating.
