Pescado Empapelado (Mexican Fish Baked in Foil Parcels)

Pescado empapelado brings a simple Mexican approach to cooking fish: sealing fillets with vegetables, citrus and aromatics so they steam gently in their own juices. The foil parcel keeps lean white fish moist while tomato, onion and jalapeño soften into a bright, lightly spicy topping. Lime adds freshness, cumin gives quiet warmth, and fresh coriander finishes the dish with herbal lift. Served straight from the parcel with warm corn tortillas, it makes a light, quick dinner that feels complete without needing a separate sauce.

Why this recipe works

  • Fast preparation: Thinly sliced vegetables and quick-cooking white fish keep the active work short and the total time to around 30 minutes.
  • Gentle parcel cooking: Sealing the fish in foil traps steam, helping it cook evenly while staying moist and tender.
  • Fresh balance: Lime, tomato and coriander lift the mild fish, while cumin and jalapeño add warmth without making the dish heavy.

Adjust the heat

  • For a milder parcel: Remove the jalapeño seeds and membranes, or use less chilli so the lime and tomato stay at the front.
  • For more heat: Keep the jalapeño seeds in, or add extra sliced chilli before sealing the parcels.

Timing notes

  • Check the fish by thickness: Thin fillets may be ready at the lower end of the cooking time, while thicker pieces may need a little longer until opaque and flaky.
  • Let the parcels stand briefly: A short rest allows the steam to settle slightly and helps the fish finish gently before opening.

Ingredient notes

  • Choose firm white fish: Skinless fillets that hold their shape work best, as they steam cleanly without falling apart too quickly.
  • Use firm ripe tomatoes: Tomatoes should be ripe enough to give flavour but firm enough to slice and soften without turning watery.

Serving ideas

  • Serve with tortillas: Warm corn tortillas are ideal for scooping up the fish, softened vegetables and limey juices from the parcel.
  • Finish with freshness: Fresh coriander and an extra squeeze of lime sharpen the flavours just before serving.

  1. Heat the oven to 220°C (430°F). Set a baking tray in the oven to heat while you prepare the parcels.
  2. Thinly slice the yellow onion, slice the tomato, and thinly slice the jalapeno pepper (remove the seeds if you want it milder). Cut the lime in half.
  3. Tear off two large sheets of aluminum foil and brush the centres with a little of the olive oil. Divide the onion, tomato and jalapeno between the sheets, making a bed for the fish.
  4. Place the white fish fillet on top of the vegetables. Sprinkle evenly with the ground cumin and fine sea salt, then squeeze over the juice of half the lime (reserve the other half for serving).
  5. Fold the foil over the fish and crimp the edges tightly to seal, leaving a little space inside for steam. Carefully place the parcels on the hot baking tray.
  6. Bake for 10 to 12 minutes, depending on thickness, until the fish is opaque and flakes easily and the vegetables have softened. Let the parcels stand for 2 minutes before opening carefully, as hot steam will escape.
  7. Warm the corn tortillas in the oven for 2 to 3 minutes, or until pliable. Roughly chop the fresh coriander.
  8. Open the parcels and scatter over the fresh coriander. Serve straight from the foil with the warm corn tortillas and the remaining lime for squeezing.

Recipe notes

Tips

  • For even cooking, choose fillets of similar thickness and keep the parcels well sealed so the fish steams rather than dries out.
  • Open the parcels away from your face, as the trapped steam is very hot.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the fish is cooked until fully opaque and flakes easily throughout.

Substitutions

  • Replace the white fish fillet with salmon fillet for a richer result; bake until it flakes easily.
  • Replace fresh coriander with fresh parsley if you prefer a milder herb flavour.

Storage

  • Refrigerate up to 2 days
  • Cool leftovers quickly, then refrigerate in a sealed container. Reheat gently in a 180°C (355°F) oven in a foil parcel until piping hot, or flake the fish into warmed corn tortillas and heat briefly.
