Chicken Mole Poblano
Why this recipe works
- Layered sauce: Toasted sesame, softened aromatics, dried chilli powders, tomatoes, spices and dark chocolate build a mole with depth rather than one-note heat.
- Blended for body: Blending the sauce before simmering gives the mole its smooth texture and helps it coat the chicken evenly.
- Tender braised chicken: Bone-in thighs simmer gently in the sauce, staying moist while absorbing the smoky, savoury flavour of the mole.

Authenticity notes
- Poblano-style character: Mole poblano is known for its dark colour, dried chilli base and subtle chocolate note, with the chocolate supporting the sauce rather than making it sweet.
- Smooth, thick sauce: A well-blended mole should be glossy and spoon-coating, with the seeds, spices, tomatoes and chocolate fully integrated.
Adjust the heat
- For a milder mole: Reduce the chilli powders slightly and let the tomato, sesame and chocolate flavours carry more of the sauce.
- For more warmth: Increase the ancho or guajillo chilli powder gradually, tasting after the sauce has simmered so the heat has time to settle.
- Keep the flavour rounded: If the mole tastes sharp or overly chilli-forward, loosen it with a little stock and simmer gently to bring the flavours back together.
Ingredient notes
- Chilli choice: Ancho brings raisin-like depth and mild heat, while guajillo adds brightness and a cleaner dried-chilli flavour.
- Use dark chocolate carefully: Dark baking chocolate gives bitterness and body; sweeter chocolate will make the mole rounder but less savoury.
- Toast the sesame: Lightly toasting the sesame seeds before blending draws out their nutty flavour and gives the sauce more complexity.
Common mistakes
- Boiling the mole too hard: Once the chocolate is added, keep the sauce at a gentle simmer; high heat can make it taste harsh or cause the sauce to split.
- Leaving the sauce too loose: After the chicken is tender, uncover the pot and simmer until the mole coats the back of a spoon rather than running off thinly.
- Overcooking lean swaps: If using chicken breast cutlets instead of thighs, shorten the simmer so the meat stays juicy.

Ingredients
Instructions
- Toast the sesame seeds in a dry frying pan over medium heat for 2 to 3 minutes, stirring, until fragrant and lightly golden. Tip into a bowl and set aside.
- Finely slice the yellow onion and peel the garlic. In the same pan, cook the onion over medium heat, stirring often, until soft and lightly browned, 8 to 10 minutes; add the garlic for the final 1 minute.
- Stir in the ancho chili powder, guajillo chili powder, ground cumin and ground cinnamon and cook for 30 seconds until aromatic. Add the canned whole peeled tomatoes and half the chicken stock, then simmer for 10 minutes to meld the flavours.
- Blend the sauce until very smooth, then return it to a large pot. Stir in the dark baking chocolate until melted, then add the toasted sesame seeds and simmer gently for 5 minutes; the mole should look glossy and lightly thickened.
- Nestle the chicken thighs into the mole and add enough of the remaining chicken stock to just cover the chicken. Bring to a gentle simmer, cover, and cook on low for 45 to 55 minutes until the chicken is tender and cooked through.
- Uncover and simmer for 8 to 10 minutes to thicken the sauce so it coats the back of a spoon, turning the chicken to glaze it. Taste and adjust the balance with a little more stock if it becomes too thick.
- Serve the chicken well coated in the mole, spooning extra sauce over the top. If you are serving with corn tortillas, warm them briefly in a dry pan and serve alongside.

Serving suggestions
This recipe pairs well with:
Tips
- For the smoothest mole, blend the sauce in batches and blend for a full minute, then pass it through a sieve-strainer if you want a finer finish.
- Keep the simmer very gentle once the dark baking chocolate is added; a hard boil can make the sauce taste harsh and split slightly.
- Food safety: make sure the chicken thighs are cooked until piping hot throughout, with no pink at the bone and the juices running clear.
Substitutions
- Replace Chicken thighs with chicken breast cutlets, but reduce the covered simmer to 18 to 22 minutes so the meat stays juicy.
- Replace Dark baking chocolate with dark-chocolate-chips for a slightly sweeter mole; start with the same amount and adjust to taste.
- Replace Chicken stock with vegetable stock for a lighter, less chicken-forward sauce.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Freeze for up to 3 months; defrost overnight in the fridge and reheat gently in a pot over low heat, loosening with a splash of chicken stock if needed, until piping hot.
