Risotto alla Milanese con Midollo (Saffron and Bone Marrow Risotto)
Why this recipe works
- Creamy without cream: Frequent stirring helps the arborio rice release starch, creating the classic loose, creamy risotto texture.
- Deep savoury flavour: Beef stock, marrow, Parmesan and butter build a rich umami base, while saffron adds its distinctive aroma and golden colour.
- Classic risotto method: Adding hot stock gradually lets the rice cook evenly while preserving a tender bite at the centre.

Authenticity notes
- Milanese style: Saffron is the defining ingredient in Risotto alla Milanese, giving the dish its golden colour and gently floral aroma.
- Bone marrow enrichment: Using beef marrow is a traditional way to add richness and depth, especially in versions served with hearty meat dishes.
Ingredient notes
- Use risotto rice: Arborio rice works well because it releases starch as it cooks while still holding a slight bite.
- Handle saffron carefully: Crushing the threads into the hot stock helps release their colour and aroma more evenly through the rice.
- Cook the marrow gently: Warm the bones just until the marrow softens and releases; harsh heat can make it greasy rather than silky.
Timing notes
- Serve straight away: Risotto is at its best immediately after resting, while it is still loose, glossy and flowing.
- Brief final rest: Covering the pan for a couple of minutes after adding butter and Parmesan helps the finish become smooth and cohesive.
Texture tips
- Keep it flowing: The finished risotto should slowly spread on the plate; loosen it with a little hot stock if it tightens before serving.
- Stop before the rice softens too far: Aim for rice that is tender with a slight bite, as it will continue to soften briefly during the final rest.

Instructions
- Pour the beef stock into a saucepan and bring to a gentle simmer over low heat. Crush the saffron threads between your fingers, stir them into the stock, and keep it hot while you cook the risotto.
- Set a large frying pan over medium heat and add the marrow bones, cut-side down. Cook for 3 to 5 minutes until the marrow softens and begins to release, then scoop the marrow into a small bowl and discard the bones.
- Return the pan to medium-low heat and add 50 g of the butter. Finely chop the onion, add it to the pan with a pinch of the salt, and cook for 6 to 8 minutes until soft and translucent, not browned.
- Stir in the arborio rice and cook for 2 minutes, stirring constantly, until the grains look slightly translucent at the edges. Pour in the wine and cook for 1 to 2 minutes until it has almost completely evaporated.
- Add a ladle of the hot saffron stock and stir until it is mostly absorbed. Continue adding stock a ladle at a time, stirring often, for 16 to 18 minutes until the rice is just tender and the risotto is loose and glossy.
- Stir in the reserved marrow and cook for 1 minute to melt it through. Take the pan off the heat, then stir in the remaining 30 g butter and the parmesan until creamy; season with the remaining salt and the black pepper. Cover and rest for 2 minutes, then serve straight away.
Recipe notes
Tips
- Keep the stock at a gentle simmer; adding cold stock slows cooking and can make the risotto gluey.
- Aim for a flowing texture that slowly spreads on the plate; if it tightens, loosen with a splash of hot stock just before serving.
Substitutions
- Replace Dry White Wine with an equal amount of Beef stock for an alcohol-free version.
- Replace Parmesan with Grana Padano cheese for a slightly milder, sweeter finish.
Storage
- Refrigerate up to 2 days
- Cool quickly, cover and refrigerate. Reheat gently in a saucepan with a splash of water, stirring until piping hot and loosened to a creamy consistency; avoid boiling hard.
