Tarka Dal with Jeera Rice
Why this recipe works
- Aromatic tarka: Sizzling cumin, garlic and chilli in hot ghee releases their aroma quickly and gives the dal its recognisable finishing flavour.
- Naturally creamy lentils: Red lentils break down as they simmer, creating a soft, cohesive dal without needing cream or heavy enrichment.
- Good for planning ahead: The dal reheats well with a little water, and storing it separately from the rice keeps both components at their best.

Authenticity notes
- What tarka does: Tarka, also known as tadka, is the technique of briefly frying spices and aromatics in hot fat before adding them to a dish for fragrance and depth.
- Why jeera rice works: Cumin rice is a classic partner for simple dals because it echoes the spice in the tarka while keeping the meal balanced and understated.
Adjust the heat
- For less heat: Keep the dried chilli whole in the tarka and remove it before serving, or reduce the amount used.
- For more heat: Break the dried chilli before adding it to the ghee, or use chilli flakes for a more direct heat.
Common mistakes
- Avoid catching the lentils: Lentils can stick as they thicken, so keep the heat gentle and stir occasionally, especially towards the end of cooking.
- Do not overheat the tarka: The ghee should be hot enough to sizzle the spices, but not smoking; burnt cumin or garlic will taste bitter.
- Add the garlic after the spices: Garlic browns quickly, so adding it after the cumin and chilli helps it turn pale golden rather than scorch.
Make-ahead tips
- Keep dal and rice separate: Store the dal and jeera rice in separate airtight containers so the rice stays fluffy and the dal can be loosened as needed.
- Loosen before reheating: Add a splash of water to the dal as it reheats, then warm until piping hot throughout.
- Freeze the dal first: The dal freezes especially well; rice can also be frozen, though its texture is usually best when freshly cooked.

Instructions
- Rinse the lentils in a sieve until the water runs mostly clear. Peel and finely chop the onion, peel and grate the ginger, and dice the tomatoes. Thinly slice the garlic and roughly chop the coriander.
- Put the lentils in a large pot with 900 ml water, the onion, ginger, turmeric and 1 tsp of the salt. Bring to the boil, then reduce to a gentle simmer for 18 to 22 minutes, stirring occasionally, until the lentils are soft and starting to break down. Skim any foam if needed.
- Stir the tomatoes into the dal and simmer for 5 minutes until they soften and the dal looks glossy and cohesive. If it gets too thick, add a splash of water; if too thin, simmer uncovered for a few minutes. Taste and season with the remaining 1 tsp salt.
- Rinse the rice until the water runs clear, then drain well. Put the rice in a saucepan with 600 ml water, 1 tsp of the cumin seeds and a pinch of salt from the measured amount if you prefer, and bring to the boil. Cover, turn the heat to low and cook for 10 minutes, then take off the heat and leave covered for 5 minutes.
- For the tarka, heat the ghee in a small saucepan over medium heat until shimmering. Add the remaining cumin seeds and the dried red chilli and cook for 30 to 45 seconds until the cumin darkens slightly and smells toasted. Add the garlic and cook for 45 to 60 seconds, stirring, until pale golden.
- Immediately pour the hot tarka over the dal and stir through. Fluff the rice with a fork and divide between plates. Finish the dal with fresh coriander and serve alongside the jeera rice.
Recipe notes
Tips
- Keep the dal at a gentle simmer and stir from time to time so it does not catch on the base of the pan.
- For a brighter finish, add most of the coriander at the end and save a little to scatter over each portion just before serving.
- If you are cooking for anyone vulnerable, make sure the dal is piping hot throughout before serving.
Substitutions
- Replace ghee with olive oil for a lighter, dairy-free tarka.
- Replace dried red chili with 0.5 tsp chili flakes for similar heat and easier measuring.
- Replace tomato with 400 g canned chopped tomatoes for a more saucy dal.
Storage
- Refrigerate up to 3 days
- Cool the dal and rice quickly, then refrigerate in separate airtight containers. Reheat the dal in a saucepan with a splash of water until piping hot; reheat the rice covered in a saucepan with a little water, or in the microwave, until steaming. Freeze the dal (best) and rice (acceptable) for up to 2 months; defrost overnight in the fridge before reheating.
