Vegan Lentil Cottage Pie
Why this recipe works
- Classic comfort: A saucy lentil filling and soft potato topping give the familiar structure and warmth of cottage pie without using meat.
- Savoury depth: Softened onion, carrot and celery form the base, while tomato purée, thyme and vegetable stock build a rounded, umami-rich filling.
- Good for batch cooking: The pie reheats well, freezes in portions and holds together neatly after a short rest.

Ingredient notes
- Use green lentils for structure: Green lentils hold their shape better than softer varieties, giving the filling a hearty texture rather than turning it completely smooth.
- Cook out the tomato purée: Letting the tomato purée darken slightly before adding stock gives the filling a deeper, more savoury flavour.
- Choose unsweetened plant milk: Unsweetened soy milk keeps the mash creamy without adding sweetness; oat drink can be used for a lighter, slightly sweeter finish.
Texture tips
- Steam-dry the potatoes: Returning the drained potatoes to the hot pot briefly helps remove excess moisture, giving a smoother mash that spreads cleanly.
- Rough up the topping: Forking the surface creates ridges that catch heat in the oven and brown more effectively than a flat layer of mash.
- Reduce the filling properly: The lentil mixture should be thick and saucy before baking so the pie slices neatly rather than spreading on the plate.
Make-ahead tips
- Assemble in advance: The filling and mash can be prepared and layered ahead, then chilled until ready to bake.
- Freeze in portions: Cool completely before freezing, ideally in individual portions for easier reheating.
- Reheat until piping hot: Defrost overnight in the fridge, then reheat in a 180°C (355°F) oven until piping hot throughout.
Common mistakes
- Check the lentils: The filling is ready only when the lentils are tender; add a splash of water if the pan dries out before they soften.
- Avoid a loose filling: If the mixture is watery before baking, simmer it a little longer so the potato topping does not sink or slide.
- Let it stand before serving: A short rest after baking helps the filling settle and makes the pie easier to spoon out neatly.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Peel the potatoes and cut into even chunks.
- Put the potatoes in a large pot, cover with cold water, and add 1 tsp of the fine sea salt. Bring to the boil, then simmer for 15 to 18 minutes until very tender.
- Meanwhile, finely chop the yellow onion, carrots and celery. Pick the thyme leaves from the sprigs and set aside.
- Warm the olive oil in a saucepan over a medium heat. Add the onion, carrots and celery with the remaining 0.5 tsp fine sea salt and cook for 8 to 10 minutes until softened and lightly golden.
- Stir in the tomato purée and cook for 1 minute. Add the dried green lentils, vegetable stock, thyme leaves and black pepper, then bring to a gentle simmer.
- Simmer for 25 to 30 minutes, stirring occasionally, until the lentils are tender and the mixture is thick and saucy. If it looks dry before the lentils are cooked, add a splash of water and continue simmering.
- Drain the potatoes well, then return them to the hot pot for 1 minute to steam-dry. Mash until smooth, then gradually mash in the unsweetened soy milk until creamy and spreadable.
- Tip the lentil filling into a baking dish and level the top. Spoon over the mash, spread to the edges, then rough up the surface with a fork for crisp ridges.
- Bake for 20 to 25 minutes until bubbling at the edges and golden on top. Rest for 5 minutes before serving so it holds together neatly.

Substitutions
- Replace Unsweetened Soy Milk with oat-drink for a slightly sweeter, lighter mash.
- Replace Fresh thyme with dried-thyme for a more robust, earthy flavour.
