Bomboloni (Italian Filled Doughnuts)
Why this recipe works
- Classic contrast: The warm sugar-coated doughnuts and chilled vanilla pastry cream create a balance of crisp, soft and creamy textures.
- Proper enriched dough: Kneading the butter in after the dough forms helps develop structure before adding richness, giving a softer finished crumb.
- Clean, even frying: Keeping the oil at 170°C (340°F) helps the doughnuts cook through while developing a deep golden exterior without becoming greasy.

Timing notes
- Chill the pastry cream fully: The filling needs to be cold and pipeable before use; warm pastry cream will loosen too much inside the doughnuts.
- Proof by appearance, not the clock: The cut rounds should look puffed and lighter before frying. Under-proofed doughnuts can be dense, while over-proofed ones may collapse.
- Best eaten fresh: Bomboloni are at their best soon after frying and filling, while the crumb is tender and the sugar coating still has a little crunch.
Texture tips
- Keep the dough elastic: Knead until the dough is smooth and glossy so it can trap air during proofing and fry into a lighter crumb.
- Drain before sugaring: Let the fried doughnuts drain briefly before rolling in sugar so the coating stays fine rather than clumpy.
- Loosen the filling before piping: Whisk the chilled pastry cream until smooth so it pipes cleanly and fills the centre evenly.
Make-ahead tips
- Make the cream first: The pastry cream can be prepared in advance and chilled until needed, which makes the frying and filling stage easier to manage.
- Fill close to serving: For the best texture, fry, sugar and fill the bomboloni shortly before serving rather than storing them already filled for long periods.
- Bring chilled doughnuts to room temperature: If refrigerated, let filled bomboloni stand at room temperature briefly before eating; the coating will soften, but the texture will be better than straight from the fridge.
Ingredient notes
- Use whole milk: Whole milk supports both the richness of the dough and the smooth texture of the pastry cream.
- Fresh lemon matters: Fresh lemon zest perfumes the milk gently, while a little juice sharpens the pastry cream without making it taste overtly citrusy.
- Choose a neutral frying oil: Sunflower or vegetable oil keeps the flavour clean; strongly flavoured oils can overpower the vanilla filling and buttery dough.

Instructions
- Make the pastry cream first so it can chill. Use a microplane or fine grater to zest the lemon, then squeeze a little juice and set both aside.
- In a saucepan, warm the milk with the lemon zest over medium heat until steaming but not boiling. In a bowl, whisk the sugar, cornflour, salt and eggs until smooth.
- Pour the hot milk into the egg mixture in a steady stream, whisking constantly, then return everything to the pan. Cook over medium heat, whisking, for 2 to 4 minutes until thick and glossy and the whisk leaves clear trails.
- Take off the heat and whisk in the butter, vanilla extract and 1 tsp lemon juice. Tip into a bowl, cover the surface closely, and chill until cold and pipeable.
- For the dough, warm the milk until just lukewarm. In the bowl of a stand mixer, mix the flour, yeast, sugar and salt, then add the milk and eggs and mix to a shaggy dough.
- Knead on medium speed for 6 to 8 minutes until smooth and elastic. Add the butter a little at a time and keep kneading for 4 to 6 minutes until the dough is glossy and pulls cleanly from the bowl.
- Shape the dough into a ball and put it in a lightly oiled bowl, turning once to coat. Cover and leave in a warm place until doubled in size.
- Tip the dough onto a lightly floured surface and roll to about 1.5 cm thick. Cut 10 rounds, then cover and leave to puff up until noticeably lighter and slightly risen.
- Heat the sunflower oil in a large pot to 170°C (340°F). Fry the doughnuts in batches for 2 to 3 minutes per side until deep golden, adjusting the heat to keep the temperature steady.
- Lift out and drain briefly, then roll the warm doughnuts in the caster sugar to coat. Let them cool for 5 minutes so the filling does not melt.
- Whisk the chilled pastry cream until smooth, then spoon it into a piping bag. Poke a small hole in the side of each doughnut and pipe in the cream until you feel resistance and the doughnut feels heavier.
Recipe notes
Tips
- Keep the oil at a steady 170°C (340°F): too hot and the outside browns before the centre cooks, too cool and the doughnuts turn greasy.
- If the pastry cream seems too firm after chilling, whisk it briefly to loosen before piping.
- Eggs in the pastry cream are cooked, but if you are pregnant, elderly, or immunocompromised, use eggs that are suitable for cooking and ensure the cream is heated until thickened and steaming hot.
Substitutions
- Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
- Replace Sunflower oil with vegetable oil for frying.
Storage
- Refrigerate up to 2 days
- Bomboloni are best eaten fresh. If needed, store filled doughnuts in an airtight container in the fridge and bring to room temperature for 20 minutes before eating; the sugar coating will soften.
